Healthy Yeongyang Bob (Nutritious Rice Cake) for Lunar New Year
A Lightly Sweetened, Savory Yeongyang Bob Recipe, Perfect as a Meal
Unlike traditional, intensely sweet Yeongyang Bob, this recipe offers a balanced, savory flavor that makes it suitable as a regular meal. Made with glutinous rice for a wonderfully soft texture and subtle sweetness, it’s packed with nutritious ingredients like chestnuts, dates, and sunflower seeds, making it both delicious and healthy. Enjoy this comforting dish not just for Lunar New Year, but any time you crave a wholesome and satisfying meal or a special treat.
Main Ingredients- 350ml glutinous rice (about 1.5 cups)
- 10 dates
- 6 chestnuts
- 2 Tbsp sunflower seeds
- 200ml water
Seasoning- A pinch of salt
- A pinch of salt
Cooking Instructions
Step 1
Prepare all the ingredients for your Yeongyang Bob. Rinse the glutinous rice thoroughly and let it soak in water for about 30 minutes. Pit the dates and slice them thinly. Peel the chestnuts and cut them into bite-sized pieces. Have the sunflower seeds ready.
Step 2
Drain the soaked glutinous rice and place it into a rice cooker or a pot. Add the prepared dates, chestnuts, sunflower seeds, and a pinch of salt. Pour in 200ml of water for cooking the rice.
Step 3
If using a rice cooker, select the ‘white rice’ setting and cook as usual. If using a pot, bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and simmer until the water is mostly absorbed (about 20-25 minutes).
Step 4
Once the rice is cooked, gently fluff it with a rice paddle to ensure the ingredients are well distributed. You can enjoy it hot right away or let it cool slightly. Savor this as a hearty meal or a nutritious snack!
