Spring Roll Ingredients- Rice paper wrappers
- 10 imitation crab sticks (kani)
- 1 cucumber
- 1 red bell pepper
- 1 yellow bell pepper
- 1 carrot
- Chili sauce (for dipping)
Homemade Creamy Peanut Sauce- 2 Tbsp peanut butter
- 1 Tbsp mayonnaise
- 1/2 Tbsp soy sauce
- 1/2 Tbsp corn syrup (or honey)
- 1/2 Tbsp lemon juice
- 2 Tbsp peanut butter
- 1 Tbsp mayonnaise
- 1/2 Tbsp soy sauce
- 1/2 Tbsp corn syrup (or honey)

Cooking Instructions
Step 1
Thoroughly wash the cucumber and trim off both ends. Then, cut it lengthwise into quarters.
Step 2
Stand the cucumber quarters upright and, using a paring knife or vegetable peeler, carefully cut away the seedy core, similar to peeling an apple. This method helps retain the crisp, outer part of the cucumber.
Step 3
The core of the cucumber contains a lot of water and has a softer texture, so it’s best to remove it. Carefully carve out this seedy part with your knife.
Step 4
Once the core is removed, thinly slice the cucumber into matchsticks (julienne). Aim for a thickness of about 0.3 cm; if they’re too thick, the spring roll might tear.

Peel the carrot and then julienne it into thin matchsticks, similar in thickness to the cucumber (about 0.3 cm). This adds a beautiful color and crunch.

Wash the red and yellow bell peppers thoroughly. First, cut off the stem and the bottom end.

Stand the bell pepper halves upright and make a cut down the middle to open them up. This makes it easier to remove the seeds and membranes.

Lay the opened bell pepper halves flat and carefully use your knife to scrape away all the seeds and the white membranes from the inside. This ensures a clean filling.

Thinly julienne the bell peppers into matchsticks, about 0.3 cm thick. Keeping them crisp is key for a great texture.

In a small bowl, combine the peanut butter (2 Tbsp), mayonnaise (1 Tbsp), soy sauce (1/2 Tbsp), corn syrup (1/2 Tbsp), and lemon juice (1/2 Tbsp). Whisk everything together until smooth and well combined. This creates a wonderfully creamy and savory peanut sauce.

Now, all your ingredients are prepped! Get a wide, shallow bowl or a plate that can hold warm water and is large enough for your rice paper wrappers. Fill it with comfortably warm water – this is crucial for softening the wrappers perfectly.

Dip one rice paper wrapper into the warm water and let it soak for about 10-15 seconds, just until it becomes pliable and soft. Be careful not to oversoak, or it might tear.

Carefully lay the softened rice paper wrapper flat on your clean work surface. Ensure it doesn’t stick to itself or the surface.

Arrange your fillings slightly above the center of the rice paper: place some shredded crab sticks, cucumber, carrot, red bell pepper, and yellow bell pepper. Avoid overfilling, as this makes rolling difficult.

Gently fold the bottom edge of the rice paper up and over the filling. Then, fold in the left and right sides towards the center, tucking them in neatly, much like you would fold an envelope.
