Salad Ingredients

  • 1 fresh tomato
  • 1/2 block silken tofu (approx. 150g)
  • 1/2 medium onion
  • 100g baby greens

Salad Dressing

  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp finely minced onion
  • 1 Tbsp vinegar
  • 1 Tbsp oligosaccharide
  • 1 tsp spicy mustard
  • 2 Tbsp lemon juice
  • 0.5 Tbsp soy sauce
  • Pinch of herbed salt
  • Pinch of sesame seeds

Cooking Instructions

First, thoroughly wash and prepare all the fresh ingredients for the salad. Drain the greens well and set them aside.

Remove the stem from the ripe tomato and cut it into 6 to 8 bite-sized wedges. Cutting them into slightly larger pieces will provide a better texture when eaten.

Carefully remove the packaging from the silken tofu. Cut it into pieces roughly the same size as the tomatoes. To drain excess water, tilt the cutting board slightly after cutting the tofu; the water will run off naturally.

Finely mince the onion that will be used for the dressing. If you prefer a milder onion flavor, you can soak the minced onion in cold water for a short while before use.

In a small bowl, combine all the dressing ingredients: olive oil, minced onion, vinegar, oligosaccharide, spicy mustard, lemon juice, soy sauce, herbed salt, and sesame seeds. Whisk thoroughly with a fork or spoon until the mustard is fully dissolved and the dressing is well combined.
