Main Ingredients- 100g Coconut Oil, softened at room temperature
- 5 Tbsp Monk Fruit Sweetener (or adjust to your preference)
- 1 large Egg
- 60g Fine Coconut Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 cup Dark Chocolate Chips (sugar-free recommended)
Cooking Instructions
Step 1
In a mixing bowl, combine the softened coconut oil (100g) and monk fruit sweetener (5 Tbsp). Whisk them together thoroughly using a whisk or spatula until the sweetener is well incorporated and the mixture is smooth. Using monk fruit instead of sugar reduces calories while maintaining sweetness.
Step 2
Crack in the large egg and whisk until well combined. You can also add vanilla extract for extra flavor (optional), baking soda (1/2 tsp), and salt (1/4 tsp). Mix everything until the batter is smooth and emulsified. You can add ingredients one by one as shown in the video, or mix them all together at once.
Step 3
Now, gradually add the fine coconut flour (60g), sifting it into the bowl. Coconut flour is very absorbent, so it’s best to add it in portions and adjust the batter consistency as you go, rather than adding it all at once.

Once the coconut flour is partially mixed in, fold in the dark chocolate chips (1/2 cup) using a spatula. Gently mix until the chocolate chips are evenly distributed throughout the batter. Since coconut flour lacks gluten, overmixing can lead to a tough texture. Mix just enough to incorporate the chocolate chips smoothly.
Step 5
Use a cookie scoop or a tablespoon to portion the cookie dough. Place rounded spoonfuls of dough onto a baking sheet lined with parchment paper, leaving some space between each cookie. Gently press down on each mound of dough with your palm or the bottom of a glass to flatten them slightly into cookie shapes. Avoid making them too thin, as they might burn.
Step 6
Bake in a preheated oven at 180°C (350°F) for approximately 9 to 11 minutes. Baking time can vary depending on the size of your cookies and your oven. Cookies are ready when the edges are lightly golden brown and the centers look set. Let the cookies cool completely on a wire rack before enjoying; they will firm up and develop their characteristic crisp texture as they cool.
