Enjoy the ocean’s bounty with kelp and the vibrant crunch of bell peppers! While kelp is delicious on its own, rolling it with bell peppers adds a delightful crispness and a boost of nutrition. My husband loves them with spicy red chili paste (gochujang) sauce, and I enjoy them dipped in savory fermented anchovy sauce. It’s a simple yet satisfying way to get essential nutrients, perfect for busy days. This recipe highlights the fresh, natural flavors of the ingredients.
Main Ingredients- Salted kelp (If using dried kelp, rehydrate thoroughly)
- Bell peppers (various colors like red, yellow, orange)
Cooking Instructions
Step 1
First, we need to remove the excess salt from the salted kelp. Gently rinse the kelp under running water, then soak it in cold water for about 10 minutes. Changing the water 2-3 times during this process will help remove the salt more effectively. Taste a small piece; if it’s not too salty, it’s ready to use.
Step 2
Prepare the bell peppers for the rolls. Wash them thoroughly, remove the seeds, and cut them into long, thin strips. If you’re adding other ingredients like squid, cucumber, or shrimp, prepare them now. For example, briefly boil and slice the squid, and julienne the cucumber.
Step 3
Lay out the desalted kelp flat, similar to how you would prepare a sheet of nori for sushi. Arrange the prepared bell peppers and any optional fillings neatly on top of the kelp. Don’t overfill, as it will make rolling difficult.
Step 4
Starting from one end, gently roll the kelp to enclose the fillings, much like making a sushi roll. Roll it firmly enough to hold its shape, but not so tightly that the fillings squeeze out.
Step 5
Once rolled, cut the kelp rolls into bite-sized pieces, either diagonally or in half. If the kelp is sticky and makes cutting difficult, lightly dampen your knife with water or apply a little oil for a cleaner cut. Arrange the pieces beautifully on a plate for a visually appealing and healthy kelp roll. Dip them in your favorite sauce and enjoy the fresh, crisp flavors!
