  • 1 onion
  • 7 hard-boiled eggs

Tangy Dressing

  • 2 individual servings of plain Greek yogurt (or approx. 200g)
  • 1 Tbsp Stevia (or your preferred sweetener)
  • 3 Tbsp Maple Syrup (or honey)
  • Pinch of black pepper

Cooking Instructions

First, prepare all the ingredients needed for the recipe. Have your eggs pre-boiled and set aside. We will steam or boil the potatoes. Wash and prepare the vegetables.

Fill a large pot with plenty of water and boil the potatoes. Cutting the potatoes into manageable pieces will shorten the cooking time. Pierce the potatoes with a chopstick or fork; if it goes in easily, they are fully cooked. Drain the cooked potatoes thoroughly in a colander.

Wash the cucumber, then carefully scoop out the seedy core with a spoon. Removing the seeds helps prevent excess moisture in the salad.

Finely dice the deseeded cucumber. The smaller the dice, the better it will integrate into the potato salad for a pleasant texture.

Peel the carrot and then cut it into thin matchsticks.
