Healthy & Delicious Vegan Rice Bread
[Eco-Natural Cook – Vegan Baking] Making Rice Bread with Whole Rice Grains, Not Rice Flour
Let’s make delicious and healthy rice bread using organic or brown rice you have at home! This healthy rice bread is also great as a meal replacement. Enjoy its wholesome goodness!
Ingredients- 200g Organic Rice
- 75g Warm Water (approx. 40°C/104°F)
- 2g Bamboo Salt (or 1.5g Sea Salt)
- 13g Brown Rice Oil (or Olive Oil)
- 3g Instant Dry Yeast
Cooking Instructions
Step 1
First, rinse the 200g of rice thoroughly under running water until clean. Then, soak the washed rice in cold water for about 3 hours until well-softened. (If using brown rice, extend the soaking time by about 1.5 to 2 times longer than for regular white rice, as it takes longer to soften.)
Step 2
Measure out 13g of brown rice oil. This oil will add a lovely subtle flavor to your vegan bread. (You can also use other plant-based oils like olive oil. Avoid canola or grapeseed oil if you want a richer taste.)
Step 3
Measure 75g of warm water. The water should be warm to the touch, around 40°C (104°F), which is ideal for activating the yeast and creating a soft dough.
Step 4
Drain the soaked rice completely using a sieve. Transfer the drained 200g of rice into a blender or food processor.
Step 5
Add 2g of bamboo salt (or 1.5g of sea salt) to the blender. Salt adds flavor and also helps control the yeast activity, so try to place it away from the yeast if possible.
Step 6
Carefully pour the pre-measured 75g of warm water into the blender.
Step 7
Add the measured 13g of brown rice oil to the blender. This will contribute to the bread’s moist texture.
Step 8
Now, measure out 3g of instant dry yeast. For best results, sprinkle the yeast into the blender, making sure it doesn’t directly touch the salt. (The yeast shown in the photo was purchased online as natural yeast, but regular instant dry yeast works perfectly well.)
Step 9
Secure the lid of the blender and blend all the ingredients until you achieve a smooth batter. It might seem lumpy at first, but continue blending until it reaches a pourable consistency, similar to a thick pancake batter. If it’s too thick, add a tiny bit more water (1-2g) until it’s just right.
Step 10
Pour the prepared rice batter into a loaf pan. Gently spread it evenly to fill the pan. If your loaf pan has a lid, place it on top. (If you don’t have a lid, it’s fine; the top will just brown nicely.)
Step 11
Bake in a preheated oven at 180°C (350°F) for approximately 30 minutes. You’ll notice the bread rising and filling your kitchen with a wonderful aroma. If the top starts browning too quickly, you can loosely cover it with aluminum foil.
Step 12
Once baked, carefully remove the rice bread from the oven and then from the loaf pan. Place it on a wire rack to cool completely. Slicing it while warm might cause it to crumble.
Step 13
Congratulations! Your healthy vegan rice bread is ready. It will have a slightly crisp crust and a soft, fluffy interior. It resembles a moist, unsweetened rice cake, and the more you chew it, the nuttier and more satisfying the flavor becomes. Enjoy your delicious homemade bread!
