  • 3-4 Cabbage leaves
  • A little Carrot
  • 1/3 Cucumber
  • 3 Mini bell peppers or green peppers for a hint of spice (or seedless chilies, to taste)

Seasoning for Boiling

  • 1/3 Tbsp Coarse salt
  • 1 Soju cup (approx. 50ml) of Mirin or Soju

Cooking Instructions

Step 1

First, rinse the chicken breast thoroughly under running water. In a pot, add plenty of water, coarse salt, and mirin (or soju), then add the chicken breast and boil for 15-20 minutes. Adding alcohol helps effectively remove any gamey odor from the chicken.

Once the chicken breast is cooked, let it cool slightly. While still warm, shred it by hand or cut it into bite-sized pieces with scissors. This will make the texture even more tender.

Julienne the carrot and shred the cabbage coarsely. Blanch the julienned carrot and shredded cabbage in boiling water for a short time. Be careful not to overcook them, as they will become too soft.

Immediately rinse the blanched carrots and cabbage in cold water (ice water) to cool them down. Then, place them in a colander to drain the water completely. Trim the cabbage leaves to a suitable size for rolling, preserving their shape so they can be rolled neatly. Cutting them too small might cause the rolls to unravel.

Lay out a cabbage leaf flat. Place the shredded chicken breast in the center. Top with the julienned carrot, seedless chili (or mini bell pepper), and cucumber, arranging them attractively. Roll it up tightly like making sushi or kimbap, ensuring the filling doesn’t fall out.
