Main Ingredients

  • 1/2 head of cabbage
  • 120g white rice (approx. 1 bowl)
  • 1/2 onion
  • A little carrot (approx. 20g)
  • A little green onion or spring onion (approx. 20g)
  • 1 egg
  • 10ml soy sauce (1 Tbsp)
  • 1-2 Tbsp olive oil

Cooking Instructions

First, prepare the cabbage rice which will be the base for your fried rice. Use about half a head of cabbage. Wash it thoroughly, peel off the outer leaves, cut it in half, and remove the core.

Finely mince the cabbage that will be mixed into the rice. Mincing it very small will help it blend better with the rice compared to slicing or roughly chopping.

Cook the rice as you normally would, placing the minced cabbage on top of the white rice and adding the usual amount of water. Since cabbage adds moisture, you can keep the water level the same or reduce it slightly.

Once the cabbage rice is cooked, scoop out the amount needed for the fried rice. It’s best to let the rice cool slightly before stir-frying, as this prevents it from clumping and results in a fluffier texture.

Prepare the vegetables that will add color and flavor to your fried rice. Finely julienne the green onion (or spring onion), onion, and carrot. You can also finely chop the green onion if preferred.

Heat 1-2 tablespoons of olive oil in a pan over medium-low heat. Add the julienned green onions and stir-fry until fragrant and slightly softened, creating scallion-infused oil. This will enhance the flavor of your fried rice.

Once the scallion oil is aromatic, add the julienned onion and carrot to the pan. Stir-fry over medium heat until the vegetables become slightly translucent. Cooking the vegetables well will bring out their natural sweetness and improve their texture.

When the onions and carrots are about halfway cooked, add 10ml (1 Tbsp) of soy sauce around the edges of the pan. Let it reduce slightly as you stir-fry the vegetables. This adds umami. Be careful to control the heat so the soy sauce doesn’t burn.

Push the stir-fried vegetables to one side of the pan. Crack the egg into the empty space and scramble it until just cooked. Once the scrambled egg is gently set, mix it with the vegetables. You can also prepare the scrambled egg separately beforehand.

Now, add the prepared cabbage rice to the pan. Stir-fry everything together over medium heat, mixing the rice with the vegetables and scrambled egg until well combined. Continue stir-frying until the rice grains are separate and the ingredients are evenly distributed. Your delicious cabbage rice vegetable fried rice is complete! You can add a pinch of black pepper to taste if desired.
