Lotus root is healthy, but it’s one of those ingredients that we don’t often get around to preparing. While some children might not like burdock root, they often enjoy lotus root, so it’s great to cook it regularly. Typically, braised lotus root is enjoyed for its ‘sweet and salty’ flavor profile. However, today, I’m sharing a recipe where I’ve reduced the amount of sugar and honey to create a healthier version with a deeper flavor. Main Ingredients

  • 300g Lotus root
  • Water (for blanching lotus root)
  • A little vinegar (for blanching lotus root)
  • 2 cups Water (for braising)

Seasoning Ingredients

  • 1 tsp Oyster sauce
  • 2 Tbsp Soy sauce
  • 1 Tbsp Sugar
  • 1 Tbsp Honey
  • Sesame seeds (toasted)
  • Black sesame seeds

Cooking Instructions

Step 1

Prepare the fresh lotus root by peeling it thoroughly and slicing it into desired pieces. To prevent browning and maintain a crisp texture, soak the sliced lotus root in cold water or in water with a little vinegar for a while before use.

Step 2

Bring a pot of water to a boil. Once the water is boiling, add the prepared lotus root and blanch for about 5-10 minutes until tender. Be careful not to overcook it, as it can become mushy. Drain the blanched lotus root and rinse it with cold water.

Step 3

In a pot or pan for braising, combine 2 cups of water with 1 tsp of oyster sauce, 2 Tbsp of soy sauce, 1 Tbsp of sugar, and 1 Tbsp of honey. Mix well to create the braising liquid. Once the seasoning liquid starts to boil, add the blanched lotus root and simmer over medium-low heat, allowing it to absorb the flavors. Stir the lotus root occasionally to ensure even coating with the sauce.

Step 4

As the lotus root reduces and the sauce becomes syrupy, you can adjust the seasoning further to your preference (e.g., by adding more corn syrup or rice syrup). Continue to simmer over low heat until the lotus root is glossy and reaches your desired consistency. It’s important to watch closely to prevent burning.

Step 5

Transfer the braised lotus root to a serving plate. Sprinkle with toasted sesame seeds and black sesame seeds for an aromatic touch and appealing presentation. Enjoy it with a warm bowl of rice!
