Cooking Instructions

Step 1

First, let’s prepare all the ingredients for our delicious Tomato Burrito Bowl. Having your ingredients prepped beforehand will make the cooking process much smoother.

Step 1

Step 2

Taco seasoning is a blend of spices that adds a Mexican flair, often featuring smoked paprika, cumin, onion, and garlic, enhancing the dish’s aroma and flavor. It’s not overly salty and adds a wonderful depth, but feel free to omit it if you prefer. For the canned baked beans, use both the beans and their sauce. To prepare the baby greens, soak them in water with 2 tablespoons of vinegar for 2-3 minutes to clean them thoroughly. Rinse them under running water about 3 times, then drain them well in a colander. This ensures your salad stays fresh. If you don’t have shredded cheese, mozzarella cheese works beautifully too.

Step 2

Step 3

Wash the fresh tomatoes under running water and chop them into approximately 2cm (about 1-inch) bite-sized pieces. Try not to cut them too small, as they might break down too much during cooking.

Step 3

Step 4

Dice the onion into roughly 1cm pieces and finely chop the green onions. Mince the garlic and the Cheongyang chili pepper. If you’re making this for children or prefer a milder taste, feel free to omit the chili pepper or adjust the amount.

Step 4

Step 5

Heat 2 tablespoons of olive oil in a large skillet or wok over medium heat. Add the minced garlic, chopped green onions, and minced chili pepper (if using), and sauté for about 1 minute until fragrant. Then, add the ground beef and cook, stirring, for about 2 minutes until it’s nicely browned. Browning the beef adds a wonderful depth of flavor.

Step 5

Step 6

Add 2 tablespoons of taco seasoning, 1 tablespoon of oyster sauce, 2 tablespoons of cooking wine, and 1 tablespoon of sugar to the skillet. Stir quickly to combine the seasonings with the beef. Now, add the chopped tomatoes and the canned baked beans (including the sauce). Cook for another 2 minutes, stirring occasionally, until the tomatoes begin to soften and the sauce starts to thicken.

Step 6

Step 7

Turn off the heat. Season with a pinch of black pepper to your liking. Give everything a final stir to ensure the flavors meld together. Your delicious tomato sauce is now ready! This sauce is also fantastic served over a bed of rice.

Step 7

Step 8

Let’s make the refreshing yogurt sauce. In a small bowl, combine 3 tablespoons of plain yogurt, 1 tablespoon of honey, 1 tablespoon of fresh lemon juice, and 1 tablespoon of grated Parmesan cheese. Sprinkle with a pinch of dried parsley flakes. Whisk everything together until smooth and well combined. This creamy, tangy sauce is the perfect counterpoint to the savory tomato mixture.

Step 8

Step 9

Spoon about half a cup of warm cooked rice into a serving bowl. This forms the base of your delicious burrito bowl.

Step 9

Step 10

Generously spoon the flavorful tomato sauce over the rice. Arrange the fresh baby greens and shredded cheese around the edges of the bowl, creating a colorful presentation. Finally, drizzle the creamy yogurt sauce over the center. Enjoy the delightful combination of the tangy yogurt sauce, crisp baby greens, and the rich, savory tomato sauce. It’s a healthy, satisfying, and truly delicious meal!
