Main Ingredients

  • Soy meat 100g (plant-based meat made from soy protein)
  • 1/4 Onion, thinly sliced

Seasoning Sauce

  • 4 Tbsp Soy sauce (regular soy sauce, not soup soy sauce)
  • 1 Tbsp Sugar (adjust to taste)
  • 2 Tbsp Mirin (or cooking sake)
  • 0.5 Tbsp Minced garlic (freshly minced recommended)

Cooking Instructions

Step 1

Prepare 100g of soy meat. Since soy meat is often dry, soak it in plenty of water for about 30 minutes until fully rehydrated. This process will make the soy meat tender and allow it to absorb the marinade better, resulting in a more delicious dish.

Step 1

Step 2

Wash and peel 1/4 onion, then slice it thinly into strips. Sliced onions will add sweetness and texture when stir-fried.

Step 2

Step 3

Let’s make the delicious bulgogi sauce! In a small bowl, combine 4 Tbsp soy sauce, 1 Tbsp sugar, 2 Tbsp mirin, and 0.5 Tbsp minced garlic. Stir well until all ingredients are fully mixed. You can adjust the amount of sugar to your preference for sweetness.

Step 3

Step 4

After soaking the soy meat for 30 minutes, squeeze out excess water thoroughly with your hands. Properly removing the water helps reduce any ‘bean-y’ taste and ensures the marinade penetrates well during cooking.

Step 4

Step 5

Heat a pan over medium heat with a little cooking oil. Add the squeezed soy meat and stir-fry for about 10 minutes. Continue cooking until most of the moisture from the soy meat has evaporated. This sautéing step will give the soy meat a chewier texture.

Step 5

Step 6

Once the soy meat has released its moisture and started to brown slightly, add the sliced onions to the pan. Continue to stir-fry over medium heat until the onions become translucent.

Step 6

Step 7

When the onions are slightly softened and releasing a sweet aroma, pour in all the prepared seasoning sauce. Reduce the heat to low and continue to stir-fry. Keep stirring to ensure the sauce evenly coats the soy meat and onions. Cook until the sauce is glossy and well-absorbed, being careful not to burn it. Your dish is ready!
