Healthy and Delicious Mild Zucchini Tofu Egg Vietnamese Rolls

I’ve prepared these mild Vietnamese rolls with fresh zucchini, soft tofu, and nutritious eggs, prioritizing the health of my beloved family. They are easy to enjoy and will satisfy everyone.

Cooking Instructions
Step 1
Press the tofu to remove excess water by wrapping it in paper towels or placing a heavy object on top. Prepare one zucchini by julienning it, and whisk three eggs in a bowl.
Step 2
Sprinkle 1/2 tsp of salt over the julienned zucchini and let it sit for 10 minutes, flipping occasionally to ensure even salting. Discard the watery center core of the zucchini, using only the moisture drawn out from the zucchini itself.
Step 3
Break up any clumps in the drained tofu, crumbling it into smaller pieces. Heat a non-stick pan over high heat without adding oil. Add the crumbled tofu and begin to stir-fry, pressing down with a spatula to break it apart further.
Step 4
Continue to stir-fry over high heat until all the moisture from the tofu has completely evaporated and it becomes slightly chewy and dry. This step enhances the tofu’s flavor and texture for the rolls.
Step 5
Once the tofu is nicely cooked and dry, pour the whisked egg mixture evenly over the tofu in the pan.
Step 6
Keeping the heat on high, quickly stir everything together with chopsticks or a spatula until the egg is cooked and well incorporated with the tofu. Be careful not to overcook.
Step 7
Add the salted zucchini to a bowl and squeeze out as much liquid as possible with your hands. This is a crucial step! Once the zucchini is drained, toss it with 1 Tbsp of sesame oil and stir-fry briefly until it’s still crisp. Avoid overcooking, as it will become mushy.
Step 8
Transfer the cooked tofu and zucchini to a serving dish to prepare them as filling for the Vietnamese rolls. Seeing the ingredients together already makes your mouth water!
Step 9
Prepare a shallow dish of lukewarm water. Dip the rice paper wrappers one by one into the water until they are pliable and ready to be filled. Do not soak them for too long, just a few seconds per wrapper.
Step 10
Place your desired amount of the prepared tofu and zucchini filling onto the softened rice paper wrapper. The tofu makes these rolls filling yet mild. Fold them neatly into bite-sized portions for easy eating.
Step 11
For added flavor, you can serve these rolls with your favorite store-bought dipping sauces. However, they are also delicious enough to enjoy on their own, savoring the natural flavors of the ingredients!
