A Light and Satisfying Low-Sodium Guacamole Sandwich Made with Fresh Avocados

It’s perfect to serve with ‘totopos,’ which are fried tortilla chips, just like how it’s traditionally enjoyed. Avocados, native to Mexico, are often called ‘the butter of the forest’ due to their rich content of vitamins and minerals. With the rising popularity of fusion cuisine, guacamole is now widely used as a garnish or an ingredient in sauces. This low-sodium sandwich, highlighting the natural flavors of fresh ingredients, is perfect for breakfast or a light lunch. Ingredients
- 2 ripe avocados
- 3 fresh tomatoes
- 3 eggs
- 70g sliced bacon
- 6 slices of bread
- 60g mixed greens
- 1 onion
- Pinch of black pepper
- 1 Tbsp lemon juice
Cooking Instructions
Step 1
First, cut the 2 ripe avocados in half. Carefully remove the pit using the tip of a knife. Scoop the flesh into a bowl and mash it gently with a fork. It’s best to leave some small chunks for texture rather than making it completely smooth.
Step 2
Peel and finely mince 1 onion. If you find raw onion too pungent, you can soak the chopped onion in cold water for a few minutes and then drain it thoroughly before use.
Step 3
Remove the stems from the 3 fresh tomatoes and cut them in half. Scoop out the seeds with a spoon. Dice the seeded tomatoes finely.
Step 4
To the bowl with the mashed avocado, add the minced onion and diced tomatoes. Season with a pinch of black pepper to your liking, and add 1 tablespoon of lemon juice to brighten the flavors and prevent browning. Gently mix everything together until well combined.
Step 5
Place the 70g of sliced bacon in a heated pan over medium-low heat. Cook until golden brown and crispy on both sides, allowing excess fat to render. Once crisp, transfer the bacon to a plate lined with paper towels to absorb any remaining grease. Set aside.
Step 6
Wipe the bacon pan with a paper towel or use a clean pan with a little oil. Carefully crack the 3 eggs into the pan, aiming to cook them roughly the size of your bread slices, similar to fried eggs. Cook the yolks to your preferred doneness.
Step 7
Melt a knob of butter in the pan, then place the 6 slices of bread in the pan. Toast them on both sides until golden brown and lightly crispy. The butter will add a wonderful aroma and flavor.
Step 8
Generously spread the prepared guacamole mixture onto one side of each toasted bread slice. This forms the creamy, fresh base of your sandwich.
Step 9
Neatly arrange about 60g of mixed greens on top of the guacamole. The crispness of the greens will add a lovely textural contrast.
Step 10
Layer the crispy bacon and the cooked egg on top of the mixed greens. These additions provide satisfying protein and enhance the overall flavor profile.

Finally, place the remaining slice of toast on top to complete the sandwich. Slice it in half for easier eating and enjoy!
