It’s a much healthier choice than pork or beef.

Spicy Jajang Steak Sauce Ingredients

  • 2 Tbsp Chunjang (black bean paste)
  • 2 Tbsp Ketchup
  • 1.5 Tbsp Soy Sauce
  • 2 Tbsp Cooking Syrup (or Oligosaccharide)
  • 1 Tbsp Minced Garlic
  • A little Soju (to substitute for cooking wine)
  • 1 Cheongyang Pepper (seeds removed and finely chopped)

Chicken Breast Steak Ingredients

  • 1/2 Onion (sliced)
  • 10 whole Garlic cloves (peeled)
  • 400g Chicken Breast (sliced against the grain)

First, rinse the 400g of chicken breast thoroughly under cold water. Even if it looks clean, it’s good practice to wash it under running water. After rinsing, pat it dry thoroughly with paper towels. Removing excess moisture is key to a delicious sear.

Heat a pan over high heat. Sear the outside of the chicken breast directly on the hot pan. This step helps to lock in the juices and creates a surface that’s easier to cut later, especially if you’re aiming for a chopped steak texture. Decide whether to chop all the chicken breast or score it. For this recipe, finely chop one piece (chop chop!) and make decorative scores on the remaining chicken breast pieces with a knife. This helps the sauce penetrate better and ensures even cooking.

Now, let’s make the delicious steak sauce. In a bowl, combine 2 Tbsp Chunjang, 2 Tbsp Ketchup, 1 Tbsp minced garlic, 2 Tbsp Cooking Syrup, and 1.5 Tbsp Soy Sauce. Mix well. It’s super simple so far, and it will stay that way!
