Homemade Hamburger Steak Sauce (Demi-Glace Style)
Here’s a recipe for a delicious sauce perfect for homemade hamburger steaks! Homemade sauces offer a deeper, richer flavor than store-bought ones, and once made, they’re wonderfully versatile for hamburger steaks and even as a sauce for omurice. It’s a simple recipe, so be sure to give it a try. Elevate your dishes with this flavorful, homemade sauce!
Sauce Ingredients- 15g Butter (approx. 1.5 Tbsp)
- 2 Tbsp Flour (cake flour or all-purpose flour, approx. 20g)
- 1.5 Ripe Tomatoes (or 200g canned whole peeled tomatoes)
- 3 Tbsp Worcestershire Sauce (approx. 45ml)
- 5 Tbsp Ketchup (approx. 75ml)
- 2 Tbsp Vinegar (apple cider vinegar or white wine vinegar, approx. 30ml)
- 2 Tbsp Sugar (approx. 30g, adjust to taste)
- Pinch of Black Pepper
- Pinch of Salt
Cooking Instructions
Step 1
First, if using fresh tomatoes, briefly blanch them in boiling water to easily peel off the skin. Removing the skin will give your sauce a smoother texture.
Step 2
Place the peeled tomatoes in a pot with a little water (about 50ml) and simmer over medium heat for approximately 15 minutes. Cook until the tomatoes become tender and easily mashable.
Step 3
Once cooked, let the tomatoes cool slightly, then transfer them to a clean jar and store in the refrigerator. This homemade tomato purée can be used in various dishes beyond hamburger steak sauce. If you find this step too time-consuming, using canned whole peeled tomatoes is a convenient alternative for making your sauce.

Transfer the cooked tomatoes to a blender and purée them until smooth. A silky smooth purée will form the base of your delicious sauce.

Heat a frying pan over low heat and melt the butter. Once the butter is melted, add the flour and stir continuously with a spatula for about 2-3 minutes until it turns a light brown color. Be careful not to burn the flour; this step adds a nutty aroma. After toasting the flour, add the prepared tomato purée, Worcestershire sauce (3 Tbsp), ketchup (5 Tbsp), sugar (2 Tbsp), vinegar (2 Tbsp), and a pinch of salt and pepper. Stir well to combine and let it simmer over low heat. (Note: If you don’t have Worcestershire sauce, you can substitute it with steak sauce or tonkatsu sauce for a similarly delicious result.)
Step 6
As the sauce begins to bubble, gradually add water while stirring to achieve your desired consistency. Once the sauce thickens and has a glossy sheen, your homemade demi-glace sauce is ready!
