Quick and Delicious Ground Pork and Quail Egg Soy-Braised Dish
Soy-braised dishes are wonderful side dishes, but if you’ve found them too time-consuming, this recipe is for you! Learn how to make a delicious soy-braised quail egg dish quickly and easily using ground pork. It’s a satisfying side dish that will become a staple.
Main Ingredients- 450g peeled quail eggs (approx. 60 eggs)
- 300g ground pork
- 150g Korean green chili peppers (Ggwari Gochu – 1 bag)
- 1/2 medium onion (use 1 small onion)
Cooking Instructions
Step 1
First, prepare the quail eggs. You can use pre-peeled and boiled quail eggs to significantly reduce cooking time. If you prefer, you can boil and peel them yourself, but using pre-peeled eggs is recommended for a quicker dish.
Step 2
Wash the Korean green chili peppers (Ggwari Gochu) thoroughly under running water. Trim off the stems. Then, use a fork to poke 2-3 holes into the body of each pepper. This allows the braising liquid to penetrate deeply, making them more flavorful, and prevents them from bursting in your mouth when eaten.
Step 3
Slice the onion into approximately 0.5cm thick pieces. If using small onions, use one whole onion; for medium to large onions, use half. The onion will mostly dissolve during the braising process, adding sweetness and depth of flavor.

Now, let’s start the sautéing process. Lightly press the ground pork with paper towels to remove excess moisture. Heat a pan over medium heat, add the ground pork, and sprinkle with 1 Tbsp of cooking wine and a pinch of black pepper. Gently break up the meat with chopsticks or a spatula to prevent clumping as it cooks. Be careful not to burn the meat.

Once the ground pork is partially cooked, add 1 Tbsp of minced garlic and stir-fry together until the fragrant aroma of garlic is released. The combination of garlic and pork will enhance the overall flavor.

Pour 200ml of water into the sautéed ground pork and bring it to a simmer over medium heat. This step helps the sauce to penetrate the meat more effectively later on.

Add the prepared soy sauce (100ml), sugar (4 Tbsp), plum syrup (2 Tbsp), and ginger syrup (2 Tbsp) to the simmering liquid. Stir well and let it boil. This is the base for your delicious sweet and savory braising sauce.

Once the sauce starts to boil, add the sliced onions and let them simmer together. The onions will absorb the sauce and add a pleasant sweetness.

Add all the prepared peeled quail eggs to the pot. Now, all the ingredients will meld together to create a flavorful soy-braised dish.

Gently stir the onions and quail eggs to ensure they are evenly coated with the sauce. Then, pour in the remaining 200ml of water, bringing the total to 400ml.

Cover the pot and let it simmer over medium heat for 10 to 15 minutes. This is a crucial step where the ingredients absorb the flavors and the dish deepens in taste.

Partway through cooking, lift the lid and gently stir the ingredients to ensure they are all evenly coated with the braising liquid. This helps to ensure consistent seasoning throughout the dish.

When the sauce has reduced slightly, add the prepared Korean green chili peppers. Adding them towards the end prevents them from becoming too soft and mushy.

Stir occasionally and continue to braise for about 5 more minutes, allowing the chili peppers to become tender yet retain a slight crispness while absorbing the sauce. This ensures they are flavorful without being overcooked.
