Ingredients

  • 1 bunch asparagus (about 10-12 spears)
  • 1 can (150g) tuna, drained
  • 2 Tbsp mayonnaise
  • 1 tsp lemon juice
  • 1 Tbsp chopped pickled plums (optional, adds depth of flavor)
  • Pinch of salt
  • Pinch of black pepper
  • 1 Tbsp olive oil

Wash the asparagus thoroughly under running water. Trim off any tough woody ends. Cut the asparagus into bite-sized pieces, about 3-4 cm long. If the spears are thick, you can halve them lengthwise for more even cooking.

Heat 1 tablespoon of olive oil in a pan over medium heat. Add the cut asparagus and sauté until lightly browned and tender-crisp. It’s important to maintain a slight crunch. Season lightly with salt and pepper.

In a bowl, combine the drained tuna, 2 tablespoons of mayonnaise, 1 teaspoon of lemon juice, and 1 tablespoon of finely chopped pickled plums (if using). Mix well. If you don’t have pickled plums, finely chopped pickles can be a good substitute for a similar tangy flavor.
