Main Ingredients

  • Black Soybeans (Seoritae) 8 handfuls (approx. 200g)
  • Dried Shiitake Mushrooms 4 handfuls (approx. 40g)

Braising Liquid

  • Water 350cc (approx. 1.5 cups)

Cooking Instructions

Step 1

First, rehydrate the dried shiitake mushrooms by soaking them in lukewarm water for about 30 minutes until softened. Once rehydrated, trim off the tough stems and slice the mushrooms into bite-sized pieces. Rinse the black soybeans thoroughly.

Place the rehydrated shiitake mushrooms and the rinsed black soybeans into a pot. Add 350cc of water for the braising liquid.

Next, add 5 tablespoons of soy sauce to bring out a savory depth of flavor.

Then, add 1 tablespoon of anchovy sauce for an extra layer of umami.
