A Heartwarming Dish of Braised Black Soybeans and Aromatic Shiitake Mushrooms
My cooking is inspired by the meals my mother used to make when I was little. Now that I’m the same age as my mom was then, it’s my turn to cook for her. This recipe brings back cherished memories of home-cooked meals.
Main Ingredients- Black Soybeans (Seoritae) 8 handfuls (approx. 200g)
- Dried Shiitake Mushrooms 4 handfuls (approx. 40g)
Braising Liquid- Water 350cc (approx. 1.5 cups)
- Water 350cc (approx. 1.5 cups)
Cooking Instructions
Step 1
First, rehydrate the dried shiitake mushrooms by soaking them in lukewarm water for about 30 minutes until softened. Once rehydrated, trim off the tough stems and slice the mushrooms into bite-sized pieces. Rinse the black soybeans thoroughly.
Step 2
Place the rehydrated shiitake mushrooms and the rinsed black soybeans into a pot. Add 350cc of water for the braising liquid.
Step 3
Next, add 5 tablespoons of soy sauce to bring out a savory depth of flavor.
Step 4
Then, add 1 tablespoon of anchovy sauce for an extra layer of umami.
