Gourmet Korean Beef Canelones at Home
Canelones Featuring Tender Korean Beef
I came up with this dish to create a simple yet luxurious meal at home using our Korean beef. Korean beef is renowned for its lean, clean taste. Since I’m cooking this for my son, I chose lean beef shank instead of fattier cuts. To ensure a tender and nutritious meal, I’ve added tofu and spinach, creating a sophisticated dish that’s both delicate and packed with goodness.
Ingredients- 3 sheets lasagna pasta
- 3 button mushrooms
- 200g Korean beef (shank cut)
- 4 cherry tomatoes
- 50g spinach
- Tomato sauce
- Salt
- Pepper
- Parmesan cheese
- Olive oil
- Rosemary (optional, for aroma)
- 1 egg yolk
- Tofu (approx. 50-70g)
Cooking Instructions
Step 1
Boil the lasagna sheets in salted water for 6 minutes. Cook them al dente, as they will bake further in the oven. Drain and set aside to prevent sticking.
Step 2
Wash the spinach thoroughly. Reserve half for the caneloni filling and the other half for the sauce. Halve the button mushrooms and cherry tomatoes.
Step 3
Finely chop the Korean beef. If you have a food processor, use it to mince the beef for a finer texture.
Step 4
In a bowl, combine the minced beef, mashed tofu, egg yolk, the reserved spinach (for filling), Parmesan cheese, salt, and pepper. Mix well until everything is thoroughly combined, forming a cohesive filling.
Step 5
Lay out a lasagna sheet on a clean surface. Spread the beef mixture evenly over the sheet, then carefully roll it up to form a caneloni shape.
Step 6
Gently shape the rolled caneloni to ensure the filling stays securely inside. Be careful not to press too hard, just enough to maintain a neat cylindrical form.
Step 7
Heat a pan with a little olive oil. Lightly sauté the halved mushrooms, cherry tomatoes, and the remaining spinach until slightly softened. This will enhance their flavor.
Step 8
Spread a layer of tomato sauce on the bottom of an ovenproof dish. Arrange the filled caneloni on top of the sauce. Scatter the sautéed mushrooms, tomatoes, and spinach around and over the caneloni. Drizzle a little olive oil over everything before baking.
Step 9
Bake in a preheated oven at 180°C (350°F) for 15-20 minutes, or until the caneloni is heated through and the sauce is bubbling. Serve hot, optionally garnished with extra Parmesan cheese.
