Pie Dough Ingredients

  • Butter (for dough) 40g, softened
  • Sugar (for dough) 25g
  • Salt (for dough) 1 pinch
  • Egg (for dough) 25g, lightly beaten
  • Cake flour (for dough) 100g, sifted

Cooking Instructions

Step 1

First, prepare the walnuts. Blanch the walnuts in boiling water for about 30 seconds to remove any impurities, then pat them completely dry with paper towels. Lightly crush some of the walnuts by hand, leaving the rest whole. Combine the crushed and whole walnuts and bake them in a preheated oven at 180°C (350°F) for about 7-8 minutes to enhance their nutty flavor. (Tip: Watch carefully to prevent the walnuts from burning!)

Step 1

Step 2

Now, let’s make the pie dough using the ‘creaming method’. In a bowl, cream the softened butter until it’s light and fluffy, like mayonnaise. Add the sugar and salt, and continue mixing until the mixture turns a pale, creamy white color.

Step 2

Step 3

Gradually add the lightly beaten 25g egg and mix well until incorporated. Add the sifted 100g of cake flour and gently mix until just combined, forming a cohesive dough. Wrap the dough in plastic wrap and refrigerate for 30 minutes to rest.

Step 3

Step 4

While the dough is resting, prepare the filling. In a saucepan, combine 20g butter, 20g oligosaccharide, 50g brown sugar, and 1 Tbsp mirin. Melt over low heat. Whisk in the 2 beaten eggs and cinnamon powder to your liking. Place this saucepan over a bain-marie (a pot of simmering water) and gently cook, stirring until the mixture is smooth and slightly thickened. (Tip: Turn off the heat of the simmering water once it starts to boil. The filling should have a pourable, liquid consistency.)

Step 4

Step 5

Remove the rested dough from the refrigerator and place it on a lightly floured surface. Roll out the dough with a rolling pin to fit your pie dish. Carefully transfer the rolled-out dough into the pie dish, pressing it gently to line the bottom and sides. Trim any excess dough from the edges.

Step 5

Step 6

Prick the bottom of the pie dough all over with a fork. This prevents the crust from puffing up during baking. Arrange the prepared walnuts evenly over the pie dough. Give the prepared filling a quick stir, then pour it evenly over the walnuts, ensuring full coverage.

Step 6

Step 7

Line a baking sheet with parchment paper or a silicone mat, and place the filled pie dish on top. Bake in a preheated oven at 175°C (350°F) for approximately 25 minutes. (Tip: At 180°C, the pie might brown too quickly. 175°C usually yields a beautiful, golden-brown crust.)

Step 7

Step 8

If the surface appears slightly puffed up during baking, don’t worry – it will settle as it cools. Once baked, remove the pie from the oven and let it cool completely. You can then wrap it beautifully for gifting, or slice it after cooling and enjoy with a cup of coffee or tea for a delightful treat.
