Transforming delicious grilled pork belly into a sweet and savory braised dish, this rice bowl is a fantastic meal. Adding garlic, onion, and green onions creates layers of flavor and makes it fun to eat. The preparation is simple, so be sure to try making it!
Main Ingredients- 300g Pork Belly
- 10 whole cloves Garlic
- 1/4 Onion
- 1/4 Green Onion
- 1 Egg Yolk (optional)
Braising Sauce- 1.5 Tbsp Soy Sauce (Jin Ganjang)
- 0.5 Tbsp Dark Soy Sauce (Nochu – for color, can substitute with more Jin Ganjang)
- 2.5 Tbsp Sugar (or Allulose)
- 3 Tbsp Mirin (Rice Wine)
- 0.5 Tbsp Minced Garlic
- 300ml Water
- 1.5 Tbsp Soy Sauce (Jin Ganjang)
- 0.5 Tbsp Dark Soy Sauce (Nochu – for color, can substitute with more Jin Ganjang)
- 2.5 Tbsp Sugar (or Allulose)
- 3 Tbsp Mirin (Rice Wine)
- 0.5 Tbsp Minced Garlic
- 300ml Water
Cooking Instructions
Step 1
First, prepare the main ingredients for the rice bowl: 300g of pork belly, 10 whole garlic cloves, 1/4 onion, and 1/4 green onion. Slice the green onion into approximately 5cm lengths. (Pre-sliced green onions are also fine to use.)
Step 2
For the whole garlic cloves, wash them thoroughly and trim off the root ends. This helps the garlic absorb the sauce better.

Slice the onion into roughly 1cm thick pieces. Cutting them this size helps them maintain their shape during the braising process.

Now, let’s make the delicious braising sauce. In a bowl, combine 1.5 Tbsp of Jin Ganjang (regular soy sauce), 0.5 Tbsp of Nochu (dark soy sauce for color – if you don’t have this, you can simply add more Jin Ganjang), 2.5 Tbsp of sugar (or allulose for a healthier option), 3 Tbsp of Mirin (sweet rice wine), and 0.5 Tbsp of minced garlic. Whisk everything together until well combined.
Step 5
Heat a pan over medium heat and place the prepared pork belly slices in it. If there’s excessive fat, you can drain some of it off as it cooks.

Arrange the pork belly evenly in the pan. Sear it on all sides until golden brown and slightly crispy, almost like frying. This process helps to lock in the juices and create a delightful texture.

Once the pork belly has a nice golden-brown color on the surface, pour the prepared soy sauce mixture into the pan.

Next, add 100ml of water and bring the sauce to a simmer over medium heat.

When the sauce starts to bubble vigorously and has reduced by about half, add another 100ml of water. Adding water in stages like this helps the pork belly cook tenderly and prevents the sauce from burning.

Now, add the whole garlic cloves to the pan and let them simmer along with the pork belly and sauce. As the garlic cooks, it will release its sweetness, enriching the flavor of the sauce.

Once the sauce has reduced by half again, add the remaining 100ml of water. You will be adding water in three stages throughout the braising process.

Then, add the sliced onion to the pan and continue to braise. The onions will soften and absorb the delicious flavors of the sauce.

When the sauce reduces by half once more, add the green onions. Cook just until the green onions have softened slightly and wilted. The fresh aroma of the green onions will add another layer of flavor.
