Gourmet Beef Intestine Rice Bowl (Horumon-don) Made at Home
How to Make a Restaurant-Style Beef Intestine Rice Bowl (Horumon-don) at Home
I vividly remember the exquisite taste of the beef intestine rice bowl (horumon-don) I had at a restaurant before the pandemic intensified. Since then, I’ve visited several times, but with the pandemic raging, it’s been ages since I’ve eaten out… Then, I saw an advertisement for beef intestine on social media and had a brilliant idea! ‘I have to make it myself!’ I decided, and recalling that distinct flavor, I set out to recreate it. This recipe allows you to enjoy a luxurious and satisfying meal at home that rivals any restaurant experience!
Main Ingredients- 300g prepared beef intestine
- A handful of fresh chives
- 1/4 onion
- 1/4 king oyster mushroom
- 1 bowl of warm rice
Special Sauce- 2 Tbsp soy sauce
- 1 Tbsp cooking sake (mirin)
- 2 Tbsp oligosaccharide (adjust sweetness to taste)
- 1 Tbsp oyster sauce
- 1 Tbsp minced garlic (freshly minced)
- 2 Tbsp soy sauce
- 1 Tbsp cooking sake (mirin)
- 2 Tbsp oligosaccharide (adjust sweetness to taste)
- 1 Tbsp oyster sauce
- 1 Tbsp minced garlic (freshly minced)
Cooking Instructions
Step 1
First, let’s prepare the vegetables that will add flavor to the rice bowl. Peel the onion and slice it thinly. The thinner the slices, the better the texture.
Step 2
Soak the sliced onion in cold water for at least 30 minutes. This process removes the sharp, pungent flavor of the onion, leaving only its crispness, which creates a fantastic harmony with the rice bowl.
Step 3
Wash the chives thoroughly and cut them into lengths of about 3-4 cm. Slice the king oyster mushroom into similarly bite-sized pieces. Chives can become soggy if overcooked, so it’s best to add them towards the end.
Step 4
Now it’s time to make the special sauce that will define the flavor of your beef intestine rice bowl. In a bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of cooking sake (mirin), 2 tablespoons of oligosaccharide, 1 tablespoon of oyster sauce, and 1 tablespoon of freshly minced garlic.
Step 5
Mix all the sauce ingredients thoroughly with a spoon. Using oligosaccharide instead of sugar adds a glossy sheen and a smooth sweetness. Preparing the sauce in advance will help shorten your cooking time.
Step 6
Now, let’s cook the star ingredient: the beef intestine. Heat a pan and add the beef intestine to grill. Be aware that it might release a lot of fat, so have paper towels ready to periodically wipe away the excess oil from the pan as you cook. This will result in a cleaner dish.
Step 7
Once the beef intestine starts to turn golden brown, cut it into bite-sized pieces (about 2-3 cm). Cutting it while cooking allows the sauce to penetrate evenly, making it even more delicious.
Step 8
When the beef intestine is almost cooked, set it aside temporarily. Add the sliced king oyster mushrooms to the pan with the remaining beef intestine fat and stir-fry them briefly. The mushrooms will absorb the rich flavor of the intestine, making them incredibly tasty. Remove the cooked mushrooms and set them aside.
Step 9
Pour the entire special sauce you prepared earlier over the well-cooked beef intestine. It’s best to maintain medium heat for this step.
Step 10
Be careful not to burn the sauce. Stir-fry quickly over medium heat for just 1-2 minutes. The sauce will coat the beef intestine beautifully, creating a glossy and delectable stir-fry.
Step 11
On top of the warm rice, artfully arrange the drained chives, the onion slices (with their pungency removed), and the fragrant stir-fried king oyster mushrooms. The vibrant colors are sure to whet your appetite.
Step 12
Finally, generously top the rice with the flavorful, sauce-coated beef intestine stir-fry. Your impressive homemade beef intestine rice bowl (horumon-don) is complete! Enjoy your delicious meal!
