Porridge Ingredients- 200ml short-grain rice (1 cup)
- 100ml glutinous rice (1/2 cup)
- 2-3 fresh abalones
- 1 onion
- 1500ml water (7.5 cups)
Seasoning and Flavoring- 1.5 Tbsp soup soy sauce (for depth of flavor)
- 1.5 Tbsp sesame oil (for nutty aroma)
- 1 Tbsp mirin (to reduce any fishy smell)
- 1 tsp salt (adjust to taste)

Cooking Instructions
Step 1
For the perfect balance of softness and chewiness in your porridge! Rinse 200ml of short-grain rice and 100ml of glutinous rice thoroughly, then soak them in water for 30 minutes. The rice will absorb the water, resulting in a much softer and tastier porridge.
Step 2
Handling the ocean’s treasure, abalone! Use a toothbrush to scrub the abalone shell and suction cups clean. Carefully insert a spoon between the shell and the meat to separate them, then remove the innards separately. Press firmly on the tentacles to remove the teeth and esophagus for a cleaner result.
Step 3
Creating a flavor base to deepen the taste! Finely mince 1 onion. Place the minced onion in a bowl, add 1.5 Tbsp of soup soy sauce and 1.5 Tbsp of sesame oil, and mix well. This step allows the onion’s sweetness and umami to enhance the abalone porridge’s overall flavor profile.
Step 4
Time to add the rich flavor of abalone! To the soaked rice, add the separated abalone innards and 1 Tbsp of mirin to eliminate any fishiness. Mix everything evenly. The innards will coat the rice grains, making the porridge richer in color and taste.
Step 5
Let’s start stir-frying! Lightly grease a preheated pot or pan with cooking oil. Add the seasoned onion and stir-fry over medium-low heat for about 1 minute. The onions will become translucent as their sweetness starts to release.
Step 6
Now, add the rice and stir-fry! Add the seasoned rice to the pot and stir-fry gently for about 3-4 minutes. Coating the rice grains with oil prevents them from sticking together and ensures the porridge will be fluffy and delicious when cooked.
Step 7
First water addition! Pour 500ml (2.5 cups) of water into the stir-fried rice and bring it to a boil over high heat. You can adjust the amount of water based on your desired porridge consistency.
Step 8
Add the nutritious abalone! Once the porridge starts boiling, add the prepared abalone and boil for another moment. As the abalone cooks, it will release a delicious broth, further enhancing the porridge’s flavor.
Step 9
Finishing touch! Add an additional 1 liter (5 cups) of hot water, cover with a lid, and simmer gently over low heat. Cook until the rice grains are completely broken down and the porridge is smooth. You’ll have a rich and delicious abalone porridge! Finally, season with salt to your preference for a perfect taste. Enjoy your meal! 🥢
