Let’s bake these intriguing Gorgonzola Cheese Scones together!
Ingredients (Makes 8 servings)- 250g low-gluten flour (cake flour)
- 7g baking powder
- 130g Gorgonzola cheese, cut into small pieces
- 80g scallions (green onions), finely chopped
- 50g olive oil
- 2g truffle salt (or regular salt)
- 20g unrefined sugar
- 90g milk (for dough and brushing)
Cooking Instructions
Step 1
First, finely chop the fresh scallions. Ensure they are washed and patted dry before chopping for the best texture.
Step 2
Cut the Gorgonzola cheese into small, bite-sized pieces. Aim for pieces around 1-2 cm; this will help them distribute evenly throughout the scone dough.
Step 3
In a large mixing bowl, sift together the low-gluten flour and baking powder to remove any lumps. Add the unrefined sugar and truffle salt (or regular salt). Whisk gently to combine these dry ingredients thoroughly.
Step 4
Add the prepared Gorgonzola cheese pieces to the bowl. Adding it at this stage helps to preserve its potent aroma and flavor.
Step 5
Using a scraper or a knife, gently cut the Gorgonzola cheese into smaller pieces directly in the bowl with the flour mixture. Work the cheese into the flour mixture as if you were cutting butter into flour, aiming for a crumbly texture. This technique prevents the cheese from melting too much and ensures its flavor is well distributed.
Step 6
Add the chopped scallions to the bowl.
Step 7
Gently mix the scallions into the dry ingredients. Now, pour in the olive oil.
Step 8
Add the cold milk to the mixture. Using cold milk helps create a flakier scone, similar to how cold butter contributes to pastry.
Step 9
Using a spatula or your hands, gently combine the ingredients until they just start to form a cohesive dough. Be careful not to overmix, as this can develop gluten and result in tough scones.
Step 10
Transfer the dough to a clean work surface. Gently press the dough together with your hands to form a single ball. Avoid kneading or overworking the dough.
Step 11
Shape the dough into a rough rectangle. Cut it in half, stack the two pieces, and gently press them together. Repeat this folding and pressing process 2-3 times. This creates layers within the scone.
Step 12
Finally, shape the dough into a rectangle about 2cm thick. Use a knife or scraper to cut the dough into 8 equal portions. Ensure the pieces are uniform in size for even baking.
Step 13
Lightly brush the tops of the scones with a little milk. This will help them achieve a beautiful golden-brown color as they bake.
Step 14
Bake in a preheated oven at 180°C (350°F) for approximately 25 minutes. The scones are ready when they feel firm to the touch and have a slight spring back. Once baked, transfer the scones to a wire rack to cool completely. Enjoy your crispy, flavorful Gorgonzola Cheese & Scallion Scones!
