  • 1/2 green onion
  • 1 Korean green chili pepper (Cheongyang chili)

  • 3 Tbsp gochugaru (Korean chili flakes)

  • 1 Tbsp sugar
  • 1 Tbsp minced garlic
  • 2 Tbsp sesame oil
  • 2 Tbsp mirin (or cooking wine)
  • 5 Tbsp water
  • A pinch of black pepper
  • A pinch of sesame seeds

Cooking Instructions

Step 1

Let’s make some delicious spicy and sweet stir-fried squid today!

Step 1

Step 2

Finely mince the Korean green chili pepper for extra spice and mix it into the prepared sauce. This helps the flavors meld evenly.

Step 2

Step 3

Prepare the vegetables for stir-frying. Slice the cabbage, onion, carrot, green onion, red chili pepper, and green chili pepper into bite-sized pieces. Cutting them too large might increase cooking time, so aim for a manageable size.

Step 3

Step 4

To remove the slimy outer layer of the squid, sprinkle it with coarse salt and rub it vigorously. Rinse thoroughly under running water. This step helps to get rid of any fishy odor and ensures a cleaner taste.

Step 4

Step 5

Cut the cleaned squid into bite-sized pieces. Avoid cutting them too small, as they will shrink when cooked.

Step 5

Step 6

Heat a pan over medium-low heat (do not preheat). First, add the green onions and stir-fry until fragrant. Then, add all the vegetables except the red chili pepper (cabbage, onion, carrot) and stir-fry until they are lightly caramelized and sweet. It’s important to cook the vegetables enough to bring out their natural sweetness.

Step 6

Step 7

Once the vegetables are partially cooked, add the prepared squid. Stir-fry quickly, coating the squid with a bit of oil as if ‘oiling’ it. This helps keep the squid tender and allows it to absorb the sauce better. As the squid begins to cook, add all the pre-mixed sauce and stir-fry everything together.

Step 7

Step 8

Stir-fry until the sauce is well combined. Then, add 5 tablespoons of water and stir-fry again. Finally, add the red chili pepper for color and give it a quick mix. Your stir-fried squid will be ready in no time!

Step 8

Step 9

Just before turning off the heat, drizzle in 2 tablespoons of sesame oil and sprinkle with sesame seeds for a glossy finish and nutty aroma. Enjoy your delicious stir-fried squid!
