Main Ingredients- 1 serving of somyeon noodles (approx. 100g)
- 3 Tbsp finely chopped kimchi
- 2 Tbsp thinly julienned cucumber
- 1 hard-boiled egg
Special Sauce- 1 Tbsp gochujang (Korean chili paste)
- 1.5 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp guk-ganjang (Korean soup soy sauce)
- 1 Tbsp sugar
- 1 Tbsp vinegar
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1 Tbsp gochujang (Korean chili paste)
- 1.5 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp guk-ganjang (Korean soup soy sauce)
- 1 Tbsp sugar
- 1 Tbsp vinegar
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, let’s prepare the special sauce, the heart of delicious Bibim Guksu. In a small bowl, combine 1 Tbsp gochujang, 1.5 Tbsp gochugaru, 1 Tbsp guk-ganjang, 1 Tbsp sugar, and 1 Tbsp vinegar. Mix them well. Set aside the sesame oil and sesame seeds for later.
Step 2
Now, it’s time to cook the somyeon noodles. Bring a large pot of water to a rolling boil and add 1 serving of somyeon noodles. A single serving is roughly the size of a 500-won coin when held in your hand. Stir occasionally to prevent the noodles from sticking together as they cook.
Step 3
Once the noodles are cooked, drain them in a colander and rinse thoroughly under cold running water. Since the noodles will be hot initially, a quick rinse under running water will help cool them down. Once they’ve cooled a bit, rub the noodles gently with your hands while rinsing. This removes excess starch and results in a chewier, more pleasant texture.
Step 4
In a large bowl, add the 3 Tbsp of finely chopped kimchi and the prepared sauce. Gently mix and knead with your hands, ensuring the sauce coats the kimchi evenly. Well-mixed kimchi will deepen the flavor of your Bibim Guksu.
Step 5
Add the rinsed somyeon noodles to the kimchi mixture. Gently toss and mix the noodles with the sauce, making sure the seasoning is evenly distributed throughout the noodles. Be careful not to break the noodles while mixing.

Finally, add 1 Tbsp of sesame oil and 1 Tbsp of toasted sesame seeds to enhance the aroma and taste. Mix gently once more until everything is well combined. Decorate the perfectly mixed noodles with the thinly julienned cucumber and the hard-boiled egg. Your beautiful Kimchi Bibim Guksu is ready!
