Many believe tomato spaghetti is easy because jarred sauces are readily available. However, when made at home, it can often turn out too sour, have an overpowering commercial taste, or the sauce can burn easily. Ingredients- 3-4 Tbsp Olive oil
- 3 cloves Garlic
- 1/2 medium Onion
- 1 strip Bacon, minced
- 1/3 jar (approx. 150-200g) Jarred tomato sauce
- 1 ripe Tomato
- 1 Liter Water (for boiling pasta)
- 100-150g Spaghetti (per serving)
- 0.5 Tbsp Salt (for pasta water)
- 0.5 Tbsp Black pepper (to taste)
- 3 Ladles (approx. 150ml) Pasta water (for sauce consistency)
Cooking Instructions
Step 1
To easily peel the ripe tomato, make a shallow cross-shaped incision on the top with a knife. Blanch it in boiling water for about 10-15 seconds. The skin will then peel off effortlessly.
Step 2
Once peeled, blend the ripe tomato until smooth using a blender. If you don’t have a blender, you can finely mince it with a knife. This step significantly deepens the tomato sauce’s flavor.
Step 3
In a large pot, bring 1 liter of water to a boil and add 0.5 Tbsp of salt. Once boiling, add the spaghetti and cook for about 5 minutes. For an authentic Italian ‘al dente’ texture, it’s best to slightly undercook the pasta.
Step 4
Heat 3-4 Tbsp of olive oil in a pan over medium-low heat. Add the thinly sliced garlic (from 3 cloves) and sauté gently for about 30 seconds to infuse the oil with its aroma. Be careful not to burn the garlic.
Step 5
Add the minced bacon (from 1 strip) to the pan and cook alongside the garlic. The savory umami from the bacon will greatly enhance the sauce’s flavor.
Step 6
Finely dice half of a large onion (or one small onion) and add it to the pan. Sauté until the onion becomes translucent and releases its sweet aroma.
Step 7
Continue to sauté the onions and bacon over medium-low heat for at least 5 minutes. This allows the natural sweetness of the onions to develop, adding depth to the sauce.
Step 8
Add about 1/3 of your jarred tomato sauce to the pan. Typically, a jar of sauce serves 3-4 people, so aim for roughly 1/3 of the jar’s content.
Step 9
Immediately add the fresh tomato puree you prepared earlier. Combining jarred sauce with fresh tomatoes creates a richer and more complex flavor profile.
Step 10
Pour in 3 ladles (about 150ml) of the pasta cooking water (pasta water) and stir everything together well for about 1 minute. Pasta water is the secret ingredient for achieving the perfect sauce consistency and helping it emulsify.
Step 11
Season with 0.5 Tbsp of black pepper, and add salt to your taste. Since the saltiness of jarred sauces can vary, it’s important to taste and adjust the seasoning as needed.
Step 12
Add the spaghetti that has been cooked for 5 minutes to the pan. Toss it with the sauce to combine.
Step 13
Now, vigorously stir and toss the pasta in the sauce for about 2 minutes. This action helps the pasta’s starch release and bind with the sauce, creating a creamy, cohesive coating on every strand. This is where the magic happens!
Step 14
Continue to add more pasta water, a little at a time, while stirring, until you reach your desired sauce consistency. The sauce should beautifully coat the spaghetti. If you achieve the perfect consistency at this stage, you can skip the next step.
