- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp vinegar
- 1 Tbsp sugar
- 1 Tbsp oligodang (oligosaccharide syrup) (for shine and sweetness)
- 1/2 Tbsp minced garlic
- 1/2 Tbsp gochugaru (Korean chili flakes) (for color and a hint of spice)
- 1/2 Tbsp toasted sesame seeds
- A pinch of sesame oil (for aroma)
Cooking Instructions
Step 1
1. Let’s make the heart of delicious bibim guksu: the golden ratio sauce! In a bowl, combine 1 Tbsp gochujang, 2 Tbsp vinegar, 1 Tbsp sugar, 1 Tbsp oligodang, 1/2 Tbsp minced garlic, 1/2 Tbsp gochugaru, 1/2 Tbsp toasted sesame seeds, and finally, a drizzle of fragrant sesame oil. Stir everything well with a spoon until the sauce is evenly mixed. It tastes even better if it rests for a bit!
Step 2
2. Time to prepare the egg. Crack 1 egg into a bowl and whisk it thoroughly with a fork or whisk until smooth.
Step 3
3. Let’s make a thin and tasty egg garnish. Heat a non-stick pan over low heat. Pour the whisked egg thinly and cook until golden brown on both sides. Be careful not to cook over high heat, as it can burn. Let the cooked egg cool down before slicing.
Step 4
4. Slice the cooled egg garnish into thin strips. Cutting them into thin julienne strips, rather than thick pieces, will make them look nice as a topping and easier to eat.
Step 5
5. Fresh lettuce will add a refreshing crunch to your bibim guksu. Wash the lettuce leaves, pat them dry, and then julienne them similarly to the egg garnish for a visually appealing presentation.
Step 6
6. Now, let’s cook the somyeon noodles. Bring a generous pot of water to a rolling boil. Once boiling, add 100g of somyeon (this is typically one serving). To prevent the noodles from sticking together, gently loosen them with chopsticks as they cook. They usually take about 3-4 minutes to cook to al dente.
Step 7
7. Rinsing the cooked somyeon in cold water is crucial for texture! Drain the noodles in a colander and immediately transfer them to a bowl of cold running water. Rub them gently with your hands as if you’re washing laundry. This process makes the noodles delightfully chewy and firm. After rinsing, drain them completely to remove excess water.
Step 8
8. It’s finally time to mix! Take the drained, springy noodles and add a generous amount of the golden ratio sauce you prepared. Mix and toss thoroughly until the noodles are evenly coated with the sauce. The key is to mix well to ensure every strand is flavored.
Step 9
9. Arrange the mixed noodles beautifully in a serving bowl. Top generously with the julienned egg garnish and fresh lettuce strips. Your appetizing bibim guksu is now complete! You can also add julienned cucumber or carrots if you like.
Step 10
10. Alright, it’s time to enjoy this sweet, sour, and delicious bibim guksu that will make you forget the heat! Enjoy your meal!
