  • 5 Tbsp rice wine (cheongju)
  • 4 cups water (800ml)
  • 4 Tbsp sugar
  • 2 Tbsp oyster sauce
  • 1 Tbsp perilla oil
  • 1 Tbsp sesame seeds
  • 2 Tbsp minced garlic
  • 1 tsp ginger powder (or 1/2 tsp grated ginger)
  • 1 Tbsp instant coffee powder (adds color and depth)
  • A pinch of black pepper

Cooking Instructions

Step 1

To effectively remove any gamey smell from the chicken, prepare 900g of chicken pieces for braising. Place the chicken in a bowl and pour enough milk to fully submerge it. Let it soak for about 30 minutes. This step is key to removing impurities and odors, ensuring a cleaner taste.

Step 2

Soak 100g of flat glass noodles in cold water. This will help them soften during cooking, resulting in a wonderfully chewy texture.

Step 3

Now, let’s make the magical golden sauce that defines the flavor of this braised chicken! First, add 12 tablespoons of soy sauce to a deep bowl.

Step 4

Add 5 tablespoons of rice wine (cheongju) to further eliminate any chicken odors and enhance the aroma.

Step 5

Pour in 4 cups (approximately 800ml) of water to balance the overall seasoning.

Step 6

Add 4 tablespoons of sugar for sweetness. Feel free to adjust the amount to your preference.

Step 7

Stir in 2 tablespoons of oyster sauce for an added layer of umami.

Step 8

Add 1 tablespoon of perilla oil for a nutty aroma. (This will also be used for pan-frying.)

Step 9

Generously add 2 tablespoons of minced garlic. Garlic is essential for boosting the rich flavor of braised chicken.

Step 10

Add 1 teaspoon of ginger powder for a subtle ginger note. The refreshing scent of ginger complements the chicken beautifully.

Step 11

Sprinkle in 1 tablespoon of sesame seeds for added nuttiness.

Step 12

Surprisingly, add 1 tablespoon of instant coffee powder! Coffee not only deepens the color of the braised chicken, making it look more appealing, but also adds a subtle, complex flavor. This unexpected ingredient truly enhances the depth of taste.

Step 13

Finally, add a pinch of black pepper and mix all the sauce ingredients thoroughly until well combined. Your golden braising sauce is now ready!

Step 14

Drain the chicken soaked in milk and rinse it lightly under running water. Pat it thoroughly dry with paper towels. Removing excess moisture is crucial to prevent oil splattering during frying and to achieve a nice golden sear on the chicken.

Step 15

Heat a wide pan over medium-high heat and add 2 tablespoons of cooking oil. Using a generous amount of oil helps in browning the chicken effectively.

Step 16

Add the dried chicken pieces to the hot pan and stir-fry over high heat for about 1 minute, just until the surface is lightly browned. This step helps seal in the chicken’s juices, keeping it tender and moist.

Step 17

Carefully wipe out the oil from the pan used for frying the chicken with paper towels. This ensures the braised chicken remains savory and not greasy.

Step 18

Now, add 2 tablespoons of perilla oil to the cleaned pan. Add the partially fried chicken back into the pan and sauté for another minute or so. The nutty aroma of perilla oil will infuse into the chicken, adding a wonderful fragrance.

Step 19

Pour in all the prepared golden braising sauce. Once it comes to a boil, cover the pan and simmer for about 10 minutes. This allows the chicken to become tender and absorb the flavors of the sauce.

Step 20

Next, prepare the vegetables that will add texture and color. Peel 2 medium potatoes and cut them into bite-sized pieces (usually quarters).

Step 21

Chop 1/2 large onion into substantial pieces and add them to the pot. The sweetness from the onion will dissolve into the braising liquid, enhancing its flavor.

Step 22

Peel 1 medium carrot and cut it into pieces similar in size to the potatoes. Carrots add both color and a subtle sweetness.

Step 23

Chop 1/4 head of a small cabbage into large pieces. The cabbage will soften as it cooks, adding a delightful dimension to the dish.

Step 24

Add all the prepared vegetables (potatoes, onion, carrot, cabbage) to the braising pot. Cook over high heat for 5 minutes, then reduce to medium heat and cook for another 5 minutes. This allows the vegetables to soften and absorb the flavors alongside the chicken.

Step 25

Add the 100g of pre-soaked flat glass noodles,

Step 26

and the large-cut half stalk of green onion. Continue to cook for another 2 minutes until the noodles and green onions are tender. Your delicious soy sauce-braised chicken is ready! Be careful not to overcook the noodles, as they can become mushy.

Step 27

Enjoy your warm and flavorful braised chicken! It will make for a special meal the whole family can savor.
