Main Ingredients- 1 fresh cucumber
- 1/2 sweet onion
- 100g dried seaweed, rehydrated
- 4 cherry tomatoes (for garnish)
- A handful of ice cubes
Golden Ratio Cold Soup Broth- 6 Tbsp vinegar
- 4 Tbsp sugar
- 1 Tbsp salt
- 600g water (approx. 3 cups)
- A pinch of sesame seeds (for finishing)
- 6 Tbsp vinegar
- 4 Tbsp sugar
- 1 Tbsp salt
- 600g water (approx. 3 cups)
- A pinch of sesame seeds (for finishing)
Cooking Instructions
Step 1
First, rehydrate the dried seaweed in cold water until softened. Once rehydrated, squeeze out excess water and chop it into bite-sized pieces, about 2-3 cm long. Chopping it this way makes it easy to slurp up with the broth.
Step 2
Wash the cucumber thoroughly and slice it into very thin julienne strips. Do the same for the onion. Slicing them thinly will maintain their crispness while ensuring they blend well with the broth for a more enjoyable taste.
Step 3
Now, let’s make Baek Jong-won’s magical golden ratio broth! Pour 600g of clean water (about 3 standard cups) into a large bowl. Then, add 6 Tbsp of vinegar, 4 Tbsp of sugar, and 1 Tbsp of salt. Stir well with a spoon until the sugar and salt are completely dissolved. Dissolving them fully is key to a clean and delicious broth.
Step 4
Add the rehydrated and chopped seaweed, along with the julienned cucumber and onion, to the broth bowl. For added color, cut the 4 cherry tomatoes in half or into desired pieces and add them. Now, generously add ice cubes for an extra refreshing chill. If you prefer a more sour taste, feel free to add a little more vinegar to your liking. For a hint of spice, a small amount of thinly sliced cheongyang pepper can be a delightful addition.
Step 5
Finally, sprinkle some sesame seeds for a nutty aroma. The cherry tomatoes and sesame seeds not only add flavor but also make the dish visually appealing. Give everything a good stir to combine. And voilà! Your refreshing Baek Jong-won cucumber cold soup is ready to be served immediately. Enjoy the cool and tangy flavors!
