Cooking Instructions
Step 1
First, wash and peel the potatoes. Julienne them into sticks that are not too thin, so they won’t fall apart during cooking. Aim for about 0.3cm thickness.

Place the julienned potatoes in cold water for about 10 minutes to remove excess starch. This step is crucial for preventing the potatoes from sticking or breaking apart during stir-frying.

Drain the potatoes and mix them with half a tablespoon of fine salt. Let them sit and brine for 20 minutes. **Important Tip:** Do not discard the liquid released from the potatoes! This liquid will help keep the potatoes moist and prevent sticking later.
