  • 3 Tbsp soy sauce
  • 1 Tbsp sugar
  • 2 Tbsp corn syrup or oligodang
  • 2 Tbsp mirin (rice wine)

Cooking Instructions

First, let’s prepare the perfect braising sauce for delicious quail eggs! In a bowl, combine 100ml of water, 3 Tbsp soy sauce, 1 Tbsp sugar, 2 Tbsp corn syrup (or oligodang), and 2 Tbsp mirin. Stir well until the sugar is dissolved. This mixture will form our flavorful sauce.

Now, pour all of the prepared sauce into a pot. It’s ready to start simmering.

Once the sauce begins to boil, add the rinsed and prepared 270g of peeled quail eggs directly into the pot. Set the heat to medium and let the eggs simmer and absorb the flavorful sauce.

As the soy sauce mixture comes to a rolling boil, skim off any foam that rises to the surface using a spoon. This step helps to create a cleaner and more refined flavor for the jorim.
