Cooking Instructions
Step 1
Using paper towels, gently press the beef sirloin (700g) on all sides to remove any excess blood. Removing the blood thoroughly is key to a clean, savory taste without any unpleasant odor.
Step 2
In a bowl, combine the blood-blotted beef with all the special marinade ingredients. Add 75ml soy sauce, 6 Tbsp sugar, 4 Tbsp cooking wine, 2 Tbsp minced garlic, 2/3 cup pear drink, and grated onion (from 2/3 onion) and mix well.
Step 3
Gently massage the beef and marinade together with your hands until well combined. Cover with plastic wrap and let it marinate in the refrigerator for at least 30 minutes. For an even deeper flavor, marinate for an hour or longer if time permits.
Step 4
While the beef is marinating, prepare the vegetables. Peel and thinly slice 1 onion and 1/3 carrot into strips. Slice 1 green onion diagonally into thick pieces. Trim the base of 1 pack of enoki mushrooms, rinse lightly under running water, and then shred them lengthwise into manageable pieces.
Step 5
Heat a pan over high heat and add the marinated beef. Stir-fry without adding any oil. It’s important to stir-fry quickly to prevent the beef pieces from sticking together.
Step 6
Once the beef is about 70-80% cooked and has changed color, add the sliced onions and carrots. Continue to stir-fry over high heat. The moisture released from the vegetables will help tenderize the beef further.
Step 7
When the bulgogi is fully cooked and the vegetables are slightly softened, add the sliced green onions and shredded enoki mushrooms. Stir-fry briefly over high heat to finish. Avoid overcooking the vegetables, as they can become mushy; a quick stir-fry is best.
Step 8
Finally, drizzle in 2 Tbsp of sesame oil for a rich, nutty aroma, and sprinkle with 1 Tbsp of sesame seeds. Give it one last quick toss to complete your delicious beef bulgogi.
Step 9
Enjoy your perfectly balanced sweet and savory beef bulgogi with a warm bowl of rice!
