Whip up some crispy outside, tender inside pancakes using sweet, seasonal golden pumpkins. These are simple yet incredibly delicious, perfect for a cozy winter evening treat for the whole family.
Pancake Ingredients- 150g Golden Pumpkin (about 1/4 of a medium pumpkin)
- 3 Tbsp all-purpose flour or pancake mix
- 4 Tbsp cold water
- Vegetable oil, for frying
- Pinch of salt
- A sprinkle of toasted sesame seeds
Cooking Instructions
Step 1
First, wash the golden pumpkin thoroughly under running water. Then, carefully peel off the skin using a knife. Slice the pumpkin into bite-sized pieces, about 0.5cm thick. Cutting them uniformly will help them cook evenly and look appealing.

Portion the sliced pumpkin into amounts you’ll cook at one time and place them on separate plates. This prevents the pumpkin from becoming mushy when mixing the batter and makes frying easier.

In a bowl, place the pumpkin slices. Lightly season them with salt. Add 3 tablespoons of flour (or pancake mix) and 4 tablespoons of cold water. Using cold water will help make the pancakes crispier.

Using a spoon or spatula, gently mix the ingredients together, coating the pumpkin pieces without breaking them. It’s important to lightly coat the pumpkin evenly. Be careful not to overmix, as this can mash the pumpkin.
