  • Whole peppercorns 0.3 Tbsp (about 15 grains)
  • Sliced ginger 15g
  • Soju 3 Tbsp

  • Store-bought Tonkatsu sauce 5 Tbsp
  • Oyster sauce 0.5 Tbsp

  • Oligodang (corn syrup) 3 Tbsp
  • Gochugaru (Korean chili flakes) 0.3 Tbsp (adjust to spice preference)
  • Dark soy sauce 0.5 Tbsp (adds color and depth; can substitute with regular soy sauce if unavailable)

Cooking Instructions

Step 1

First, rinse the pork ribs thoroughly under running water. Remove any blood or excess fat clinging to the bones, then use scissors or a knife to separate them into individual ribs and place them in a bowl.

Step 1

Step 2

To remove blood, fill the bowl with enough cold water to cover the ribs. Put on rubber gloves and gently massage the ribs to release the blood. Change the water and repeat this process 4-5 times until the water runs clear. (This step is crucial for eliminating any gamey smell. If you’re using frozen ribs, soaking them in water for 30 minutes to an hour will further help in removing blood.)

Step 2

Step 3

After washing them thoroughly, drain the ribs in a colander and set aside.

Step 3

Step 4

Prepare the aromatics to help remove any odors while boiling the ribs. You’ll need whole peppercorns (about 15 grains), 3-4 bay leaves, and 15g of thinly sliced ginger.

Step 4

Step 5

In a pot, combine 1.2 liters of water with the prepared ginger, bay leaves, peppercorns, and 3-4 tablespoons of soju. Bring this mixture to a boil over high heat.

Step 5

Step 6

Once the water is boiling vigorously, add the drained pork ribs to the pot and stir them gently to ensure they are submerged in the water.

Step 6

Step 7

After adding the ribs, bring the water back to a boil. Then, reduce the heat to medium and let the ribs simmer for about 30 minutes with the lid slightly ajar. (Leaving the lid completely closed can cause the water to boil over, so it’s best to keep it partially open. This simmering process ensures the ribs cook through until tender and any unwanted odors dissipate.)

Step 7

Step 8

While the ribs are boiling, let’s make the delicious BBQ sauce! In a bowl, combine 1 tablespoon of minced garlic, 5 tablespoons of store-bought Tonkatsu sauce, 0.5 tablespoon of oyster sauce, 2 tablespoons of vinegar, 3 tablespoons of oligodang, 0.3 tablespoon of gochugaru (adjust to your spice preference), and 0.5 tablespoon of dark soy sauce. Whisk everything together with a whisk or spoon until well combined. (The sauce should taste slightly less seasoned at this stage because it will reduce and concentrate as it cooks with the ribs. This prevents it from becoming too salty.)

Step 8

Step 9

Drain the ribs that have been simmering for 30 minutes in a colander. Then, rinse each rib individually under running water. Gently scrape away any residual blood or impurities stuck between the bones with your fingers to ensure they are perfectly clean.

Step 9

Step 10

Now it’s time to grill the ribs. Heat 2 tablespoons of olive oil in a frying pan over medium heat. Sear the ribs on both sides until they are golden brown. Searing the outside first helps to lock in the juices and enhances the flavor when the sauce is added later.

Step 10

Step 11

Once the ribs are nicely browned, use a brush to generously coat each rib with the prepared BBQ sauce, making sure to cover every surface, including areas near the bones.

Step 11

Step 12

Reduce the heat to medium-low. Continue to cook the ribs, turning them frequently, and brushing with more sauce as needed. Keep an eye on the sauce to prevent burning, basting until the sauce thickens and coats the ribs beautifully.

Step 12

Step 13

Once the sauce has caramelized and glazed the ribs, creating a rich, sticky coating, your delicious Pork Rib BBQ Ribs are complete! Sprinkle with a pinch of sesame seeds for garnish before serving hot.
