Ingredients

  • Generous 3 Tbsp minced garlic (using coarsely minced garlic enhances texture and flavor)
  • 1 bowl of warm cooked rice
  • 2 Tbsp cooking oil
  • 10g unsalted butter
  • 1 pinch of salt
  • 1 Tbsp soy sauce
  • Sesame seeds for garnish

Cooking Instructions

Heat 2 tablespoons of cooking oil in a wide pan over medium-low heat. Add 3 tablespoons of minced garlic. For a richer flavor and more enjoyable texture, I highly recommend using garlic that is minced with some larger pieces, rather than a very fine mince. If you only have finely minced garlic, it will still be delicious, though perhaps a touch less texturally interesting.

Gently sauté the garlic, stirring frequently. Cook until the raw pungent smell dissipates, the moisture evaporates, and the garlic turns a beautiful golden-brown color. Be careful not to burn the garlic.

Add 1 bowl of warm cooked rice to the pan with the fragrant garlic.

As soon as you add the rice, sprinkle in a pinch of salt. This helps to season the rice evenly as you stir-fry.

Add 10g of butter to the empty space and let it melt. Then, mix the melted butter into the rice for added richness and flavor.

Push the rice to one side of the pan again. Pour 1 tablespoon of soy sauce into the empty space and let it sizzle for a moment, allowing it to caramelize slightly. This deepens the umami flavor.

Once the soy sauce has caramelized, mix it thoroughly with the rice and garlic. Stir-fry until everything is well combined and coated. Taste the fried rice and add a tiny bit more salt if needed.
