He’s grown accustomed to my dry curry dishes, so this time, I’m making a flavorful, saucy curry brimming with tender ingredients. This curry is so irresistibly delicious, you’ll want to savor every last grain of rice. It’s an easy and simple recipe that anyone, regardless of their cooking skills, can master!

Let’s start by preparing the vegetables. Peel the potatoes and onions, then cut them into roughly 1.5cm cubes. Cut the carrot into similar-sized pieces. While the size of the vegetables can be adjusted to your preference, it’s best to keep them moderately sized to prevent them from becoming mushy during cooking.

Use a cut of beef that’s not too fatty for tenderness, and cut the cauliflower and broccoli into bite-sized florets. The broccoli stems can also be used effectively.

Bring a pot of water to a boil. Add the prepared broccoli and cauliflower and blanch for exactly 1 minute. Blanching briefly will enhance their vibrant color and crisp texture, and prevent them from becoming too soft when added to the curry later. Immediately rinse the blanched vegetables under cold water to stop the cooking process, then drain them thoroughly in a colander.
