Pan-Fried Rice Cake Snack with Cheese & Nuts
A delightful treat made with chewy rice cakes, toasted to crispy perfection and topped with melted cheese, crunchy nuts, and sweet-tart dried cranberries. Enjoy this warm and incredibly delicious snack!
Ingredients- 8 pieces of gara-tteok (Korean cylindrical rice cake, adjust thickness as preferred)
- A handful of walnuts
- A handful of almonds
- 2 Tbsp dried cranberries
- 50g mozzarella cheese
- 1 slice of cheese (e.g., American or cheddar)
Cooking Instructions
Step 1
Prepare the gara-tteok. You can cut them into bite-sized pieces if they are too thick, or slice them like tteokbokki cakes.
Step 2
Heat a generous amount of cooking oil in a pan over medium-low heat. Add the rice cakes and pan-fry, flipping them occasionally until they are golden brown and slightly softened. Ensure they don’t burn.
Step 3
Once one side of the rice cakes is golden, flip them over, cover the pan with a lid, and continue cooking on low heat. This helps the inside become soft and chewy, and the cheese will melt more easily.
Step 4
Once the rice cakes are nicely browned, it’s time to add the delicious toppings. Keep an eye on the heat to prevent them from burning.
Step 5
Sprinkle the toasted walnuts, almonds, and dried cranberries evenly over the pan-fried rice cakes. For an extra nutty flavor, lightly toasting the nuts beforehand is recommended.
Step 6
Generously top with mozzarella cheese and let it melt. Covering the pan again will help the cheese melt more smoothly and evenly.
Step 7
Finally, thinly slice the cheese and scatter it over the rice cakes and mozzarella. Gently stir everything together once the cheese has melted and is well combined with the rice cakes. Turn off the heat and let the residual heat finish melting the cheese. Stir briefly and then remove from heat.

Transfer the warm, freshly pan-fried rice cakes to a plate and enjoy immediately! You’ll be amazed by the perfect combination of crispy exterior, chewy interior, nutty crunch, and sweet-tart flavor. It’s hard to stop after just one bite!
