On a cloudy day, perfect for enjoying indoors, here’s a recipe for ‘Corn Fritters’ that you can whip up with ingredients from your fridge. Using canned corn, these fritters are crispy on the outside and tender on the inside! With sweet condensed milk on the side, the salty-sweet, addictive corn fritters are a crowd-pleaser for all ages. Fried to a golden crisp, the popping texture of the corn kernels is simply delightful.
Corn Fritter Basic Ingredients- 1 can canned corn kernels, drained
- 3 Tbsp mozzarella cheese
- 1/2 cup tempura flour (or all-purpose flour)
- A pinch of salt
- Generous amount of cooking oil
- Condensed milk to taste (for dipping or drizzling)
Cooking Instructions
Step 1
First, drain the canned corn kernels by placing them in a sieve and gently shaking off the excess water. It’s good to lightly shake the kernels so they don’t clump together.

In a large bowl suitable for mixing batter, add the drained corn. Then, add 1/2 cup of tempura flour. The amount of flour might need slight adjustment depending on the moisture content of the corn.

The key is to achieve a consistency where the corn kernels can be loosely bound together. I recommend starting with 1/2 cup and adding a little more if needed, while checking the batter’s consistency.

Now, add a pinch of salt to enhance the flavor and 3-4 tablespoons of mozzarella cheese for a nutty taste and chewy texture. The mozzarella cheese will blend well with the corn, offering a richer flavor.
