Crispy Outside, Tender Inside! Making Delicious French Fries at Home That Everyone Loves
Make perfectly crispy and tender, savory french fries at home that rival any restaurant. They’re perfect for special occasions, snacks, or even as a beer accompaniment!
Main Ingredients- 600g Potatoes (about 3-4 medium-sized)
- 1/2 cup minced onion (approx. 50g)
- 1/3 cup chopped green onion (approx. 30g)
- 3 Tbsp cornstarch (approx. 30g)
- Salt
- A little milk or water
- Cooking oil for frying
Cooking Instructions
Step 1
First, peel the fresh potatoes and cut them into bite-sized pieces, about 1 to 1.5 cm thick. Rinse the cut potatoes lightly under running water to remove excess starch for a better texture.
Step 2
In a pot, add enough water to generously cover the potatoes, and add 1/3 Tbsp of salt. Bring to a boil over high heat and cook until the potatoes are tender. (They are cooked when a chopstick easily pierces them.)

While the potatoes are boiling, finely mince the onion and chop the green onion. Prepping the vegetables like this will help save time during cooking.
Step 4
Once the potatoes are boiled, drain them completely and mash them while they are still hot. Mashing when warm ensures a smooth, lump-free consistency. Using a potato masher or a fork makes this process easier.
Step 5
To the mashed potatoes, add 3 Tbsp of cornstarch, 1/2 tsp of salt, and the minced onion and chopped green onion. Gradually add a little milk or water, kneading until you achieve a soft, pliable dough that isn’t too stiff.
Step 6
Kneading the dough thoroughly is crucial! The more you knead, the smoother the dough will become, preventing it from cracking or breaking apart during frying.

Once the dough is ready, lightly grease your hands and shape the dough into your desired size and shape, typically finger-thick sticks. Ensuring uniform shapes will help them cook evenly.

Pour a generous amount of cooking oil into a wide pan and preheat it over medium heat to about 170-180°C (340-350°F). Once the oil is at the right temperature, carefully add the shaped potato dough. For the first fry, cook for about 2-3 minutes over medium-high heat until lightly golden brown on both sides. (The key here is to only partially cook the outside, not the inside.)
Step 9
Remove the fries from the first fry using a slotted spoon, drain excess oil, and let them cool slightly. This cooling process allows the inside of the fries to become more tender while the outside crisps up further.
Step 10
Reheat the oil to a slightly higher temperature, around 180-190°C (350-375°F). Add the cooled fries back into the hot oil for a second fry, cooking for just 1-2 minutes until they are a beautiful golden brown. This double-frying method creates the ultimate crispy exterior and tender interior.
