Introducing a delicious crab stick pancake that the whole family will love! The tender crab sticks, fresh vegetables, and savory eggs come together to create a fantastic flavor. It’s easy to make with pancake mix and simple seasonings, making it a perfect snack for kids or a side dish. Pan-fry generously in oil over medium-low heat until golden brown and crispy on the outside, and moist on the inside. Main Ingredients- 5 crab sticks
- 2 eggs
- 2 Tbsp pancake mix
- 30g carrot
- 1/2 green onion
- 1 red chili pepper
- 1 green chili pepper
- 1/4 Tbsp salt
- Pinch of black pepper
- Generous amount of cooking oil
Cooking Instructions
Step 1
Tear or chop the 5 crab sticks into bite-sized pieces. If you chop them too finely, they might break apart, so it’s best to cut them into a suitable size.
Step 2
Finely chop or julienne the 30g of carrot. Finely chop the 1/2 green onion. Remove the seeds from the red and green chili peppers and mince them finely to add a spicy kick. (If you don’t like spicy food, you can omit the chili peppers or adjust the amount.)
Step 3
In a large bowl, crack the 2 eggs and whisk them well with a whisk. Add 2 Tbsp of pancake mix and 1/4 Tbsp of salt, and mix thoroughly to create a smooth batter without lumps.
Step 4
Add all the prepared crab sticks and minced vegetables to the batter bowl. Sprinkle a pinch of black pepper. Gently mix everything together with a spatula until all ingredients are well combined with the batter.
Step 5
Heat a pan over medium-low heat and add a generous amount of cooking oil. Spoon the batter into the pan to form small pancakes of your desired size. Cooking over high heat can burn the outside while leaving the inside undercooked, so manage the heat carefully and fry until golden brown on both sides. Fry for about 3-4 minutes per side.
