Key Ingredients- 1 cup well-fermented kimchi (finely chopped)
- 1/4 onion (thinly sliced)
- 1 red chili pepper (seeds removed, thinly sliced diagonally)
- 1 green chili pepper (seeds removed, thinly sliced diagonally)
- 5 Tbsp corn kernels (canned)
- 1 cup pancake mix (buchim garu)
- 1 cup튀김가루 (tempura flour)
- 2 cups cold water
- 1 Tbsp gochugaru (Korean chili powder, fine)
- Pinch of black pepper
- Pinch of salt (adjust based on kimchi’s saltiness)
- 1 cup mozzarella cheese (shredded or shredded)
- 4 slices cheddar cheese
Cooking Instructions
Step 1
First, finely chop the kimchi into bite-sized pieces. Thinly slice the onion, and remove the seeds from the red and green chili peppers before slicing them thinly diagonally. Preparing the vegetables this way will enhance the texture of your kimchi pancake.

In a large bowl, combine the pancake mix and tempura flour. Gradually add cold water while whisking to create a smooth batter without lumps. Adding tempura flour helps achieve an extra crispy texture. Be careful not to overmix.
