Hello, everyone! It’s been a while since I’ve shared a new recipe! Today, we’re going to make ‘Golden Cheese Chocolate Chip Muffins,’ a treat loved by all ages! These muffins combine the rich, savory flavor of golden cheese with the sweet delight of chocolate chips, creating a truly irresistible bite. Perfect for special occasions or as a delightful snack!
Muffin Batter Ingredients- 150g unsalted butter, softened to room temperature
- 150g granulated sugar
- 3 large eggs, at room temperature
- 250g cake flour (low-gluten flour)
- 30g golden cheese powder
- 4g baking powder
- 80g milk, at room temperature
- 30g chocolate chips
Cooking Instructions
Step 1
First, in a mixing bowl, cream the softened unsalted butter (150g) using a whisk until it becomes smooth and fluffy. Ensure the butter is at room temperature for best results.
Step 2
Gradually add the granulated sugar (150g) in 2-3 additions while whisking continuously. Continue to whisk until about 50% of the sugar is dissolved and the mixture is light and creamy, with a pale ivory color. This helps create a tender crumb.
Step 3
Add the room temperature eggs (3 large) one at a time, whisking well after each addition to ensure they are fully incorporated and the mixture doesn’t curdle. Properly emulsifying the eggs is key to a moist and smooth muffin. If your eggs are cold, the batter might separate, so always use room temperature eggs.
Step 4
In a separate bowl, sift together the cake flour (250g), golden cheese powder (30g), and baking powder (4g). Add these dry ingredients to the wet ingredients. Using a spatula, gently fold the mixture together with a cutting motion until just combined. Be careful not to overmix, as this can develop gluten and make the muffins tough.
Step 5
Finally, pour in the room temperature milk (80g) and gently fold it into the batter until just incorporated, creating a smooth consistency. Transfer the batter into a piping bag and fill muffin liners in a muffin tin to about 70% capacity. Filling them too full will cause them to overflow during baking.
Step 6
Sprinkle the chocolate chips (30g) evenly over the top of the batter in each muffin cup.
