Easy Potato Snack Recipe: Crispy & Buttery Roasted Potatoes!
My mom bought some potatoes to make doenjang jjigae (soybean paste stew), and I decided to use some for a delicious snack! Since there were plenty of side dishes already prepared at home, I opted for a snack today. If we hadn’t had many side dishes, I might have made stir-fried shredded potatoes. So, the snack I’ve made with potatoes today is ‘Gamja Butter Gui’ (Roasted Potatoes with Butter). Potatoes are delicious simply boiled or roasted, but what about potatoes with butter? Adding just butter doubles the flavor! Let me show you how to make these wonderful roasted potatoes with butter right now.
Ingredients- 5 potatoes (medium-sized)
- 2 Tbsp cooking oil
- 2 Tbsp butter
- 2 Tbsp sugar
- 1/2 Tbsp salt
- 1 pinch black pepper
- 1 pinch dried parsley (for garnish)
Cooking Instructions
Step 1
First, thoroughly wash and peel the 5 potatoes. Then, cut them into bite-sized pieces that are easy to eat (about 2cm thick half-moons or cubes). Rinse the cut potatoes in cold water to remove excess starch; this helps prevent them from sticking together while cooking and makes them crispier.
Step 2
Now, in a preheated pan, melt 2 Tbsp of cooking oil and 2 Tbsp of butter over medium-low heat. Be careful not to let the butter burn. Once the butter is fully melted, add all the cut potatoes. Sprinkle 1/2 Tbsp of salt and a pinch of black pepper over the potatoes to season them.
Step 3
Increase the heat to medium and stir-fry the potatoes for about 5-7 minutes until they turn golden brown and slightly crispy. Stirring frequently will ensure even cooking and a beautiful color. Once the edges of the potatoes start to look golden, sprinkle 2 Tbsp of sugar evenly over them. The sugar will caramelize, adding a sweet flavor and a glossy finish.
Step 4
Continue to stir-fry for another 2-3 minutes until the sugar melts and coats the potatoes, giving them an appetizing golden-brown color. Check if the potatoes are cooked through by piercing them with a fork; they should be tender. Finally, sprinkle a pinch of dried parsley for a beautiful garnish and a fresh aroma. Your delicious butter-roasted potatoes are ready! Enjoy them hot for the best crispy exterior and soft, fluffy interior.
