Main Ingredients

  • 150g lotus root
  • A pinch of toasted sesame seeds
  • 2 Tbsp corn syrup

Braising Sauce

  • 1.5 paper cups (approx. 270ml) water
  • 1 tsp coarse sea salt
  • 1 tsp turmeric powder
  • 1 Tbsp soy sauce
  • 2 Tbsp cooking wine (mirin or sake)
  • 1 Tbsp plum extract (maesilcheong)
  • 2 Tbsp corn syrup

Cooking Instructions

Step 1

To remove any bitterness and enhance crispiness, soak the lotus root slices in water mixed with 1 Tbsp of vinegar for about 10 minutes. This step is key to achieving a delicious texture.

Step 1

Step 2

In a small bowl, combine 1 tsp coarse sea salt, 1 tsp turmeric powder, 1 Tbsp soy sauce, 2 Tbsp cooking wine, 1 Tbsp plum extract, and 2 Tbsp corn syrup. Whisk everything together until well combined and smooth, creating your flavorful braising sauce.

Step 2

Step 3

Drain the lotus root slices that were soaking in vinegar water and gently pat them dry. Then, place them into the prepared braising sauce and toss to coat evenly, ensuring each piece is well-marinated.

Step 3

Step 4

Pour 1.5 paper cups (approximately 270ml) of water into a pot. This water will be used to cook the lotus root and form the delicious braising liquid.

Step 4

Step 5

Place the pot over high heat and let it simmer and reduce for about 10 minutes. Starting with high heat helps to quickly cook the lotus root and thicken the sauce initially.

Step 5

Step 6

Once more than half of the liquid has evaporated, add an additional 2 Tbsp of corn syrup. Reduce the heat to medium and continue to simmer for another 5 minutes. This is the crucial stage for achieving a glossy finish, so keep an eye on it to prevent sticking or burning.

Step 6

Step 7

Turn off the heat. Drizzle in a little sesame oil and sprinkle generously with toasted sesame seeds. Your crispy, golden-yellow braised lotus root is now ready to be enjoyed! It’s a perfect accompaniment to warm rice.
