Making Fragrant and Sweet Tangerine Jam at Home
Let me show you how to make delicious, fresh, and sweet tangerine jam using sun-kissed tangerines. It’s wonderful spread on toast or mixed with yogurt. The process is quite simple, so be sure to give it a try!
Ingredients- 1kg fresh tangerines
- 300g granulated sugar (adjust according to tangerine sweetness)
- 2 tablespoons fresh lemon juice

Step 1
First, it’s crucial to wash the tangerines thoroughly. Gently rub the peels with baking soda. Then, pour enough water to cover the tangerines and let them soak for about 10 minutes. After soaking, rinse them under running water multiple times to remove any residue from the peel, and then drain them completely.
Step 2
Peel the thoroughly washed tangerines. Once peeled, cut them into quarters. If there are any seeds, it’s best to remove them.
Step 3
Now, get your blender ready. Place the quartered tangerines into the blender and process until very smooth, with no large chunks remaining. The key is to blend them finely so there aren’t many solids left.
Step 4
Transfer the pureed tangerines and 300g of sugar into a clean pot. While the typical fruit-to-sugar ratio for jam is 1:1, tangerines are quite sweet, so I’ve reduced the amount of sugar. Feel free to adjust the sugar quantity to your preference.
Step 5
Stir the tangerines and sugar together in the pot until well combined. Then, bring the mixture to a boil over high heat. Once it starts boiling, reduce the heat to medium-low. From this point on, stir continuously to prevent the jam from sticking to the bottom of the pot as it simmers gently.
Step 6
As the jam simmers, skim off any foam that forms on the surface with a spoon. Continuously removing the foam will result in a cleaner-tasting jam and help it thicken. Continue skimming until no more foam appears.
Step 7
As the jam’s consistency thickens, you’ll need to stir it more carefully. When you lift your spoon and the jam drips off in thick, separate dollops rather than flowing smoothly, it’s time to add the 2 tablespoons of fresh lemon juice. Lemon juice adds a refreshing tang and helps preserve the jam.
Step 8
After adding the lemon juice, the jam will become even thicker and may start to ‘pop’ and splatter as it boils. Be extremely cautious to avoid burns. Using a deep pot can help prevent the jam from splattering in all directions.
Step 9
When the jam begins to splatter, it’s almost ready. Before turning off the heat, test its readiness by dropping a small amount into cold water. If the jam holds its shape and doesn’t dissolve, your delicious tangerine jam is complete!
Step 10
You can adjust the jam’s consistency to your liking – make it runnier or thicker. Once it reaches your desired consistency, turn off the heat, and pour it into sterilized jars to cool. Enjoy your homemade jam!
