Fresh Kimchi Bibim Guksu Recipe with Added Minced Beef for Extra Flavor
For all you bibim guksu lovers out there, try this incredibly delicious twist! We’re taking fresh, crunchy ‘geotjeori’ (fresh kimchi) and tossing it with tender minced beef and chewy noodles, all coated in a vibrant, tangy sauce. The addition of sesame oil at the end adds a wonderful nutty aroma, making this dish a satisfying and flavorful meal.
Main Ingredients- 50g minced beef
- 1 serving spaghetti noodles (approx. 80-100g)
- 2cm cucumber, thinly julienned
- 1 handful geotjeori kimchi, roughly chopped
- 1 cherry tomato, quartered or cut into wedges
- 1 lettuce leaf, thinly shredded
Beef Seasoning- 1 Tbsp soy sauce
- 1/2 Tbsp ‘Mihyang’ (or cooking wine)
- 1/4 Tbsp ginger juice
- 1/2 Tbsp plum extract (or syrup)
- 1/2 Tbsp minced garlic
Bibim Guksu Sauce- 4 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 1 Tbsp plum extract (or syrup)
- 1 Tbsp minced garlic
- 1 Tbsp lime juice (or lemon juice/vinegar)
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1 Tbsp soy sauce
- 1/2 Tbsp ‘Mihyang’ (or cooking wine)
- 1/4 Tbsp ginger juice
- 1/2 Tbsp plum extract (or syrup)
- 1/2 Tbsp minced garlic

- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Bring a pot of water to a rolling boil. Add the spaghetti noodles and cook for about 10 minutes, or until al dente (slightly firm to the bite), perhaps 1-2 minutes less than package instructions. Once cooked, drain the noodles and rinse them under cold water to stop the cooking process and remove excess starch. Set aside.
Step 2
In a skillet, add the minced beef. Combine 1 Tbsp soy sauce, 1/2 Tbsp Mihyang, 1/4 Tbsp ginger juice, 1/2 Tbsp plum extract, and 1/2 Tbsp minced garlic. Stir well to coat the beef. Cook over medium-high heat, stirring frequently, until the beef is fully cooked and the sauce has thickened slightly. This should only take a few minutes.
Step 3
In a large mixing bowl, add the drained spaghetti noodles and the cooked seasoned minced beef. Gently toss them together to begin combining.
Step 4
Now, let’s prepare the star of the show – the bibim guksu sauce! In a separate small bowl, combine 4 Tbsp gochujang, 1 Tbsp soy sauce, 1 Tbsp plum extract, 1 Tbsp minced garlic, and 1 Tbsp lime juice (if you don’t have lime, lemon juice or vinegar works as a substitute). Whisk everything together until smooth and well combined. Taste and adjust seasoning if needed.
Step 5
Add the thinly julienned cucumber and the chopped geotjeori kimchi to the bowl with the noodles and beef. The fresh crunch of the cucumber and the zesty tang of the kimchi will add wonderful texture and flavor.
Step 6
Spoon about 1 Tbsp of the prepared bibim guksu sauce over the ingredients in the bowl. Gently mix everything together until the noodles, beef, and vegetables are evenly coated with the sauce. You can add more sauce if you prefer a stronger flavor.
Step 7
