  • 1/3 carrot
  • 2 leaves napa cabbage
  • 2 slices canned pineapple (sliced)

Special Bibim Sauce

  • 2/3 Tbsp gochujang (approx. 10g)
  • 2.5 Tbsp soy sauce (approx. 37.5ml)
  • 1 Tbsp corn syrup (approx. 15ml)
  • 1 Tbsp vinegar (approx. 15ml)
  • 1 Tbsp sesame seeds, ground (approx. 10g)
  • 2/3 Tbsp sugar (approx. 10g)
  • 1.5 Tbsp canned pineapple juice (approx. 22.5ml)
  • 1/2 Tbsp sesame oil (approx. 7.5ml)

Cooking Instructions

Step 1

First, prepare the vegetables for the bibim guksu. Wash the cucumber, carrot, and napa cabbage thoroughly, pat them dry, and then slice them thinly into long strips. Slicing the vegetables thinly will help them mix well with the noodles and improve the texture.

Step 1

Step 2

If using canned pineapple slices, cut them into bite-sized pieces. The sweetness and tanginess of the pineapple will enhance the flavor of the bibim guksu.

Step 2

Step 3

Now, let’s make the delicious bibim sauce. In a bowl, combine all the sauce ingredients except for the sesame oil: gochujang, soy sauce, corn syrup, vinegar, ground sesame seeds, sugar, and canned pineapple juice. Mix them well until smooth, without any lumps. A bibim guksu made with this golden ratio sauce is always a winner!

Step 3

Step 4

Boil the Chinese noodles in plenty of water, following the cooking time indicated on the package. Chinese noodles may require slightly longer cooking than regular somen to achieve a perfectly chewy texture. Stir occasionally to prevent the noodles from sticking together.

Step 4

Step 5

Once the noodles are cooked, immediately drain them in a colander and rinse them thoroughly under cold running water to remove excess starch. Rinsing under cold water makes the noodles even more springy and chewy. After rinsing well, gently shake the noodles to remove as much water as possible. Excess water can dilute the sauce and make the dish taste bland.

Step 5

Step 6

Arrange the prepared julienned vegetables attractively at the bottom of a large bowl or plate for serving. Colorful vegetables will make your bibim guksu look even more appetizing.

Step 6

Step 7

Place the drained Chinese noodles generously on top of the vegetables. The chewy Chinese noodles will be the star of your bibim guksu.

Step 7

Step 8

Finally, spoon the prepared special bibim sauce generously over the noodles. Drizzle with sesame oil for a nutty aroma. Now, use chopsticks or a mixing spoon to toss everything together until the noodles, sauce, and vegetables are well combined. Your glossy Chinese noodle bibim guksu is ready to be enjoyed! For an extra touch, you can serve it with a boiled egg or some seaweed flakes.
