Cooking Instructions
Step 1
First, prepare 450-500g of chicken spare ribs. In a bowl, combine the chicken ribs with all the marinade ingredients: mirin, cooking sake, milk, soy sauce, minced garlic, brown sugar, and a pinch of pepper. Gently massage the ingredients into the chicken and let it marinate for 10 minutes. Afterward, add 2 Tbsp (30ml) of cornstarch and mix once more. This helps the marinade adhere beautifully, ensuring a delicious crust when cooked.
Step 2
While the chicken is marinating, let’s make the delicious barbecue sauce! In a small bowl, combine ketchup, Worcestershire sauce, brown sugar, cooking sake, grated ginger, minced garlic, and a pinch of pepper. Stir everything together until well combined. It’s a simple yet flavorful sauce!

Once the chicken has marinated for 10 minutes, heat a pan over medium heat and add 2 Tbsp (30ml) of vegetable oil. Place the marinated chicken spare ribs in the pan. Cook over medium to medium-low heat for about 8 minutes, turning occasionally for even cooking. Around the 6-minute mark, use paper towels to carefully wipe away any excess oil that accumulates in the pan. This ensures a cleaner, less greasy finish.
Step 4
After cooking for 8 minutes, pour all the prepared barbecue sauce over the chicken. Increase the heat to high for 1 minute, then reduce to medium heat for another 1 minute.
